Lemony Mushroom Orzo Soup
- 2 1/2 cups sliced fresh mushrooms
- 2 green onions, chopped
- 1 garlic clove, minced
- 1 Tbsp. olive oil
- 1 1/2 cups chicken broth
- 1 1/2 tsp. minced fresh parsley
- 1/4 tsp. dried thyme
- 1/8 tsp. pepper
- 1/4 cup uncooked orzo pasta
- 1 1/2 tsp. lemon juice
- 1/8 tsp. grated lemon peel
In a small saucepan, saute the mushrooms, onions and garlic in oil until tender. Stir in the broth, parsley, thyme and pepper.
Bring to a boil. Stir in the orzo, lemon juice and peel. Cook for 5-6 minutes or until pasta is tender.
