Try recipes.com, they have several. I think I'm looking for the same one. The soft drop pineapple cookie is similar to ones my mom made. Good Luck:)

These are one of my favorites and the kids love them. They are also very easy to make. Hope you enjoy!

Pineapple Drop Cookies
Categories: Cookies
Yield: 1 Servings
&frac; c Butter
&frac; c Sugar
1 ea Egg
&frac; c Pineapple; drained - crushe d
1&frac; c Flour; sifted
Salt; a pinch
&frac; ts Baking soda
&frac; ts Baking powder
&frac; c Nut meats

Cream butter, sugar, add remaining ingredients. Mix well, drop 1/2 teaspoon on cookie sheet. Bake in oven at 375 F.

My mom used to make filled cookies with pineapple. A rolled sugar cookie on the bottom, then a tablespoon of pineapple filling, then another sugar cookie on the top. You could cut holes in the second one if you prefer so all can see the filling. I just love these and they stay moist for quite a while. I have also used cherry and apple fillings Very good. Enjoy!!
