Hot Weather Cold Tacos

Cold tacos are simple, quick and nice in hot weather or a quick snack, brunch or lunch.

Ingredients:

  • taco shells or soft tacos
  • pre-cooked meat at hand (I used seasoned cold cooked chicken, yummy!)
  • greens at hand
  • tomatoes
  • salsa
  • optional extras (cut pre-cooked corn, beans, refried beans, peppers, avocado, left over mixed veggies, cheese)

Directions:

For hot weather, do not heat anything. Use what's on hand, cold or room temperature. Take a taco shell, layer greens in the bottom, put veggies in on top of greens. Put the meat on top of veggies, and the salsa on meat. Serve and eat.

Yummy, quick and easy. Add a serving of chips for extra zest.

Servings: For small people use 2 or 3 taco shells. Use 4-5 for teens and bigger folk.
