Today's Recipes


Barbequed Spareribs

Brown:

  • 1 1/2 - 2 lb cut up spare ribs and put in a pot to keep warm

Saute in butter:

  • 1/4 cup chopped onions
  • 1 large celery stick - chopped

Add:

  • 1/2 cup water
  • 1/2 cup ketchup
  • 1/4 tsp dry mustard
  • 1 tbsp Worchestershire sauce
  • 1 tbsp vinegar
  • 1 tbsp lemon juice
  • Salt to taste
  • Dash of cayenne
  • 1 tbsp brown sugar

Cook 5-10 minutes then pour over spareribs in saucepan.

Simmer approximately 1 hour. Serve with rice.

I often double the sauce since it's so good on rice that we eat a lot of it!

Salad Dressing Cake

Ingredients

  • 3 cups flour
  • 1 1/2 cup sugar
  • 1/2 cup cocoa
  • 1/3 tsp. salt
  • 3 tsp. soda
  • 1 1/2 cups water
  • 1 1/2 cups mayonnaise
  • 2 tsp. vanilla

Directions

Put first 5 ingredients in bowl. Add remaining ingredients. Mix all ingredients. Bake in 9x13 inch cake pan at 350 degrees F for 45 minutes.

Snickers Cake

Ingredients

  • 1 box German chocolate cake mix
  • 1 pkg. caramels
  • 1 stick margarine or butter
  • 1/3 cup milk
  • 3/4 cup chocolate chips
  • 1 cup pecans (opt.)

Directions

Prepare cake mix as directed on box. Pour 1/2 of batter in 9x13 inch greased, not floured, pan. Bake at 350 degrees F for 20 minutes. Meanwhile, melt caramels, butter and milk in double boiler. Remove cake from oven and pour caramel mixture over it. Top with chocolate chips and pecans and dot remaining batter on top. Return cake to oven and bake at 250 degrees F for 20 minutes. Then turn oven to 350 degrees F and bake for 10 to 15 minutes more.

Chocolate Sheet Cake

Ingredients

  • 1 1/4 cup margarine or butter
  • 1/2 cup unsweetened cocoa
  • 1 cup water
  • 2 cups unsifted flour
  • 1 1/2 cups brown sugar (firmly packed)
  • 1 tsp. baking soda
  • 1 tsp. ground cinnamon
  • 1/2 tsp. salt
  • 1 can sweetened condensed milk (NOT evaporated milk)
  • 2 eggs
  • 1 tsp. vanilla extract
  • 1 cup confectioner's sugar
  • 1 cup nuts (chopped)

Directions

Preheat oven to 350 degrees F. In a small saucepan, melt 1 cup margarine; stir in 1/4 cup cocoa, then water. Bring to a boil; remove from heat. In a large mixer bowl, combine flour, brown sugar, baking soda, cinnamon and salt. Add cocoa mixture; beat well. Stir in 1/3 cup sweetened condensed milk, eggs and vanilla. Pour into greased 9x13 jelly roll pan. Bake 15 minutes or until cake springs back when lightly touched. In a small saucepan, melt remaining 1/4 cup margarine; stir in remaining 1/4 cup cocoa and sweetened condensed milk. stir in confectioner's sugar and nuts. Spread on warm cake.

Coffee Cocoa Cupcakes

Ingredients

  • 1 cup sugar
  • 1/2 cup shortening
  • 1 egg
  • 1 1/3 cup flour
  • 1/3-1/2 cup cocoa
  • 1 tsp. baking powder
  • 1/2 tsp. soda
  • 1/4 tsp. salt
  • 1/2 cup milk
  • 1/2 tsp. vanilla
  • 1/2 cup hot coffee

Directions

Cream sugar, shortening and egg together. Sift together flour, cocoa, baking powder, soda and salt. Add dry ingredients alternately with the remaining liquid ingredients. Put in liners and bake 20 to 25 minutes at 350 degrees.

Neiman Marcus Cake

Neiman Marcus Cake #1

This is a delicious recipe using a yellow butter cake mix and several other ingredients easy to keep on hand. I got it out of our church cookbook that was printed in 1987, and I have used it more times than I can count. It is always a hit and so easy to "make and take."

Neiman Marcus Cake

  • 1 box yellow butter cake mix
  • 1 stick margarine or butter
  • 1 egg, beaten with fork

Mix with fork or pastry cutter and press into rectangular cake pan sprayed with cooking spray. It is much easier to press this mixture down if you use a piece of plastic wrap to keep mixture from sticking to your fingers.

  • 1 cup chopped pecans or walnuts
  • 1/2 cup coconut flakes
  • 1 box (16 oz) powdered sugar
  • 8 oz cream cheese, softened
  • 3 eggs

Beat cream cheese, sugar and eggs, then add the coconut and nuts--mix and pour over pressed down cake mixture. Bake at 350 for 30 to 35 minutes until golden brown. Cool, and cut into bars. Make them on the small side as these are very sweet and rich. So good!

Neiman Marcus Cake

Ingredients

  • 1 box chocolate cake mix
  • 2 eggs
  • 1 stick butter (melted)
  • 1 cup pecans (chopped)
  • 1 pkg. chocolate chips
  • 1 pkg. cream cheese
  • 2 eggs (beaten)
  • 1 lb. powdered sugar
  • 1/2 cup pecans (chopped)
  • 1 tsp. vanilla

Directions

Combine cake mix, eggs and melted butter; press into a 9x13 inch pan. Sprinkle pecans and chocolate chips evenly over cake mixture. Combine remaining ingredients; beat well. Pour over cake and spread evenly. Bake at 350 degrees F for 45-60 minutes.

Turtle Cake

Ingredients

  • 1 German chocolate cake mix
  • 1 pkg. caramels
  • 1/2 cup evaporated milk
  • 3/4 cup margarine
  • 1 cup pecans (chopped)
  • 1 pkg. chocolate morsels

Directions

Make cake according to package directions. Melt caramels, milk and margarine all together until smooth and creamy. Grease 9x13 inch pan. Pour 1/2 cake mixture in pan; bake for 15 minutes. Take out and pour caramel mixture on. Sprinkle nuts on. Sprinkle chocolate morsels on. Pour rest of cake mix on top and bake 20 minutes at 350 degrees F.

Warm Berry Compote

Ingredients

  • 1 container (1 pound) strawberries, hulled and each cut into half
  • 1 cup raspberries
  • 1 cup blueberries
  • 1/4 cup sugar

Directions

In large skillet add berries and sugar. Stir gently and let sit for 15 minutes. Cook mixture over medium heat for 3-4 minutes or until sugar dissolves and berries soften slightly. Gently stirring occasionally.

Serve over ice cream or pound cake or toppped with whipped cream.

Panhandle Pudding Cake

Ingredients

  • 2 cups flour
  • 2 cups sugar
  • 2 Tbsp. cocoa
  • 6 eggs
  • 1/2 lb. butter
  • 1/2 tsp. salt
  • 1 tsp. vanilla

Directions

Use a deep oven safe bowl to mix the first 3 ingredients together. Add the remaining ingredients. Bake in the mixing bowl at 350 degrees for 30 to 45 minutes. The longer it bakes- more cake, less pudding.

Rosemary Garlic Mashed Potatoes

Ingredients

  • 4 1/2 lb. Yukon Gold potatoes, peeled and 1/4'd
  • 6 large cloves garlic, peeled
  • 2 sprigs fresh rosemary or 1/2 tsp. dried rosemary
  • 1/2 stick (4 T.) butter
  • 3 ozs. 1/3 less fat neufchatel cream cheese
  • 1/2 tsp. each salt and pepper
  • Rosemary sprigs for garnish

Directions

Cook potatoes, garlic and rosemary in a large pot in liberally salted water to cover 25-30 minutes or till tender when pierced with a fork. Remove and reserve 1 cup cooking water. Drain potatoes in a colander, remove rosemary sprigs.

Return potatoes and garlic to pot. Add next 4 ingredients; mash till almost smooth. Gradually add reserved potato water and mash until smooth and fluffy. Spoon into a serving dish and garnish.

Per serving: 182 calories, 28 g. carbs, 4 g. protein, 2 g. fiber, 6 g. fat (3 g. sat. fat, 16 mg. cholesterol, 173 mg. sodium)
