Candy Recipe Using Soda Crackers

I once tried these incredible cookies. They were made with soda crackers, the soda crackers were place on cookie sheet as one layer, then they took something and poured it over the crackers. I think it went in oven, then once out of oven they put a bag of chocolate chips on it and spread. They were so good. Does any one have the recipe? I would really love to try to it.

Canning Pears

My pear tree is full this year and I'm wondering what to do with all of them. Last year we gave so many away that not everyone could eat all of them and some went to waste. Can I can them and how do I do this?

Instant Iced Coffee

Ingredients

  • 1 1/2 tsp. instant coffee
  • 3/4 cup cold water
  • 2 Tbsp. milk
  • 1 Tbsp. sugar
  • 1/2 cup ice cubes
  • 2 Tbsp. cool whip

Directions

Stir instant coffee into cold water in a tall glass, add sugar and milk. Stir until well blended add ice cubes. Top with cool whip just before serving.

Frozen Yogonanas

Ingredients

  • 2 containers (6 oz. each) strawberry yogurt
  • 14 wooden popsicle sticks
  • 7 large bananas, peeled and cut crosswise in half
  • 2 cup golden grahams cereal, finely crushed

Directions

Cover cookie sheet with waxed paper.Place yogurt in shallow bowl. Carefully insert popsicle sticks into cut end of each banana. Roll each banana in yogurt, then sprinkle with cereal. Place on cookie sheet and freeze about 2 hours or until firm.

Texas Pecan Pie

Ingredients

  • 5 eggs
  • 3 tsp. butter (soft or melted)
  • 1/2 cup white sugar
  • 1 1/4 cup white corn syrup
  • 1 tsp. vanilla
  • 1/4 tsp. salt
  • 3 Tbsp. flour
  • 2 cup pecan halves
  • 1 unbaked 9 or 10 inch pie shell

Directions

Beat eggs slightly. Add butter, sugar, syrup, vanilla, salt, flour and pecans. Pour into pie shell. Bake at 350 degrees F for about 40 minutes or until center is soft but not quite set.

Easy Roasted Stuffed Peppers/Chilis

You need 6-8 Poblano Chilis. Roast them over an open flame or in a broiler until outer skin is charred on both sides. Place in a bag for 10 min. to let skins loosen, peel off under running water. Run Knife down side and remove seeds inside.

Stuff the chilis with a mixture of:

  • 1 lb. of any Cooked Meat (chicken, pork, beef)
  • 1 Cup cooked Rice
  • 1/4 c. Raisins
  • 1/2 tsp. each Cumin, Coriander and Oregano
  • Salt & Pepper to taste

They can be Refrigerated at this point.

To heat, microwave until hot. Delicious Garnished with Fresh Cream & Ground Nuts (Pistachio, Walnut, or Pecans). Serve with Beans and Tortillas on the side.

It takes about 30 minutes to make these.

Homemade Hamburger Helper

The following recipes are effective hamburger helper substitutes.

Seasoning (Makes enough for a few batches):

Mix together the following.

Ingredients:

  • 1 1/4 teaspoon black pepper
  • 1 Tablespoon garlic powder
  • 2 Tablespoons dried parsley
  • 1/2 cup instant onion
  • 1 Tablespoon onion powder
  • 1 1/2 teaspoons salt
  • 1 2/3 cups fat-free dry milk powder
  • 3 1/2 Tablespoons beef bouillon granules

Store in a jar with tight between uses.

Cheeseburger Casserole

Ingredients:

  • 1 pound hamburger
  • 1 1/2 cups water
  • 1 cup uncooked macaroni
  • 1 can chopped tomatoes
  • 1/2 cup seasoning mix
  • 2 cups of grated cheese

Directions:

First brown the hamburger and drain off the fat. Add 1 1/2 cups water, 1 cup uncooked macaroni, 1 can chopped tomatoes and 1/2 cup seasoning mix. Simmer covered 20 minutes or until macaroni is tender. Remove from heat and add 2 cups of grated cheese.

Chili Tomato Macaroni

Ingredients:

  • 1 pound hamburger
  • 1 1/2 cups water
  • 1 cup uncooked macaroni
  • 1 can chopped tomatoes
  • 1/2 cup seasoning mix
  • 1 Tablespoon chili powder

Directions:

First brown the hamburger and drain off the fat. Add 1 1/2 cups water, 1 cup uncooked macaroni, 1 can chopped tomatoes, 1 tablespoon chili powder and 1/2 cup seasoning mix. Simmer covered 20 minutes or until macaroni is tender.

Potato Casserole

Ingredients:

  • 1 pound hamburger
  • 1 1/2 cups water
  • 1 cup uncooked macaroni
  • 1 can chopped tomatoes
  • 1/2 cup plus 1 tablespoon seasoning mix
  • 5 or 6 medium sized potatoes, thinly sliced

Directions:

First brown the hamburger and drain off the fat. Add 1 cup water, 5 or 6 peeled sliced thinly potatoes, 1/2 cup plus 1 tablespoon seasoning mix. Simmer covered for 20 to 30 minutes or until potatoes are tender. Stir. Uncover and cook until excess water is evaporated.

Oatmeal Cookies

Oatmeal Cookies I

Ingredients:

  • 1 c. shortening or margarine
  • 1 c. brown sugar
  • 1 c. white sugar
  • 2 eggs
  • 1 t. vanilla

Mix these ingredients and beat until smooth and fluffy.

Dry Ingredients:

  • 1 1/2 c. flour
  • 1 t. baking soda
  • 1 t. salt
  • 2 c. quick oatmeal

Mix thoroughly and add to beaten ingredients. Shape the dough in to a long roll. Wrap in wax paper and refrigerate. When well chilled, cut into thin slices. Place on an ungreased cookie sheet. Bake 8 to 10 minutes at 350 degrees. Place dough in refrigerator during baking, while waiting.

Oatmeal Cookies II

Ingredients:

  • 3/4 cup margarine
  • 1 cup brown sugar
  • 1/2 cup white sugar
  • 1 egg
  • 1/4 cup water
  • 1 tsp. vanilla
  • 1 cup sifted flour
  • 1 tsp. salt
  • 1/2 tsp. baking soda
  • 3 cups oatmeal (uncooked)

Directions:

Beat margarine, sugar, eggs, water, and vanilla. Sift together dry ingredients (all but oats.). Mix with sugar mixture. Mix well. Blend in oatmeal and drop by teaspoons onto greased cookie sheet. Bake at 350 degrees for 12-15 minutes. Add chopped nuts, raisins, chocolate chips or coconut if desired to your dough.

Yummy Healthy Oatmeal Cookies

Ingredients

  • 3 cups Oats
  • 1 cup Flour
  • 1 cup Brown Sugar
  • 6 individual packets of Splenda/Equal
  • 1 cup Olive Oil
  • 4 Egg Whites
  • 1 tsp. Cinnamon
  • 1 tsp. Baking Powder
  • 1 cup Raisins
  • 1 tsp. Vanilla Extract

Directions

Mix all dry ingredients and break up the sugar well. Pour into the mix all the wet ing. and mix well. Mixture is sort of sticky. Drop spoonfuls of mixture on cookie sheet (Use parchment paper for easy clean up!) and shape into a cookie by giving it a little pat on top. Put into a 375 degree F oven for about 15 min. Remove from oven let them cool and then sprinkle them with powder sugar.

Apple Bars

Ingredients

  • 2 cups sugar
  • 3 cups flour
  • 3 eggs
  • 3/4 cup salad oil
  • 2 tsp. vanilla
  • 1 tsp. soda
  • 3 cups apples (chopped)
  • 1/2 cup raisins
  • 1 cup nuts (optional)
  • Cinnamon (optional)

Directions

Mix all ingredients together. You may add 1 to 2 tsp. of cinnamon for spicier flavor (Dough will be thick) Spread in 9x13 inch pan and bake about 30 minutes at 350 degrees F. Test doneness with toothpick.

Pie Crust Tips and Recipes

Tips and recipes for making pie crusts.

Never Fail Pie Crust

Ingredients:

  • 1 1/2 cup flour
  • 1 T. vinegar
  • 1/2 tsp. salt
  • 1 egg
  • 2 Tbsp. cold water
  • 3/4 cup Crisco

Directions:

Mix flour, salt and Crisco until crumbly. Beat egg, vinegar and water together. Add to flour mixture. Work together quickly. A soft dough will be easier to handle if you let it rest for about 15 minutes. Roll out on a floured pastry board. Place in pie plate and bake at 350 degrees until lightly browned.

Simple Pie Crust

Here's a recipe for making two basic pie crusts. It's enough to make one crust covered pie or two pies with no covers.

Ingredients:

  • 2 1/4 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 stick (4 ounces) of butter
  • 1/4 cup vegetable shortening
  • 6 tablespoons of ice water

Directions:

Sift flour and salt into a mixing bowl.

Then cut in butter and shortening using a pastry blender or two knives until the mixture resembles bread crumbs. Next add water, one tablespoon at a time.

Divide into to two equal size portions and roll them into balls.

Then wrap each ball in plastic wrap and let them chill for at least one hour before rolling out.


Pie Crust

Ingredients

  • 1 cup lard
  • 2 5/8 cups flour
  • 1 1/2 tsp. salt
  • 1/2 cup water

Directions

Mix dry ingredients together with lard. Add water and roll. Will keep in refrigerator or will freeze.

Salted Nut Roll

Salted Nut Roll I

  • 1 yellow cake mix
  • 2/3 cup oleo
  • 1 egg

Mix together and press onto a cookie sheet. Bake at 325 degrees F for 16 minutes. Sprinkle with 2 cups miniature marshmallows and bake for 1 minute. Spread marshmallows evenly over the cake mixture.

Melt together:

  • 2/3 cup light corn syrup
  • 2 tsp. vanilla
  • 1/4 cup oleo
  • 12 oz. pkg. peanut butter chips

Remove from heat and stir in 2 cups Rice Krispies. Spread over the marshmallows. Top with one large bag salted nuts. Rich and good!!!

Salted Nut Roll II

Ingredients

  • 1 dry yellow cake mix
  • 2/3 cup margarine (softened)
  • 1 egg
  • Miniature marshmallows
  • 2/3 cup white syrup
  • 1 pkg. peanut butter chips
  • 1/4 cup margarine
  • 2 tsp. vanilla

Directions

Mix cake mix, margarine and egg; pat into jelly roll pan. Bake at 325 degrees F for 10 to 15 minutes. Remove; cover with miniature marshmallows. Return to oven 5 to 9 minutes until melted; cool. Combine syrup, chips, butter and vanilla in saucepan; stir over low heat until chips and syrup are well blended. Pour over crust; add peanuts over top.
