Chicken Waikiki

Ingredients
  • 1 can sliced pineapple
  • 1 cup sugar
  • 2 Tbsp. cornstarch
  • 3/4 cup cider vinegar
  • 1 Tbsp. soy sauce
  • 1 tsp. ginger
  • 1 chicken bouillon cube
  • 1 green pepper
  • 3-4 lbs. of chicken

Directions

Coat the chicken piece with flour and fry to golden brown. Put in a 9x13 inch pan with skin side up. Preheat oven to 350 degrees. Drain the pineapple juice in a measuring cup. Add water to make 1 1/4 cup. Combine sugar, cornstarch, juice, vinegar, soy sauce, ginger and the bouillon cube. Bring to a boil, stirring constantly. Boil until sauce in a golden brown and sticky. Pour over chicken. Bake, uncovered, 30 minutes. Then add the pineapple slices and the sliced green pepper. Baste well and bake another 30 minutes. (Authentic Hawaiian Recipe)
