Peanut Butter Cookies #2

Ingredients

  • 2 1/2 cups flour
  • 1/2 tsp. salt
  • 1/2 tsp. soda
  • 1 cup margarine
  • 1 cup peanut butter
  • 1 cup white sugar
  • 1 cup brown sugar
  • 2 eggs

Directions

Mix flour, salt and soda; set aside. Mix margarine and peanut butter; add both kinds of sugar and mix well. Stir flour mixture into peanut butter mixture. Drop dough from a teaspoon on baking pan. Flatten with a fork. Bake at 375 degrees F for 10 to 15 minutes. Makes 4 to 5 dozen.

Hot Caramel Apple Cider

Ingredients

  • 1/2 Gallon fresh apple cider
  • 1/4 cup packed brown sugar
  • 1/4 cup caramel ice cream topping
  • 1 cup frozen whipped topping, thawed

Directions

In large saucepan, combine the cider, sugar and caramel topping over medium heat. Simmer until hot and well blended, stirring frequently. Pour into mugs and top with whipped topping

Peanut Blossoms

Ingredients

  • 1 cup shortening
  • 1 cup peanut butter
  • 1 cup white sugar
  • 1 cup brown sugar
  • 2 eggs
  • 4 Tbsp. milk
  • 1 tsp. vanilla
  • 3 1/2 cup flour
  • 2 tsp. soda
  • 1 tsp. salt
  • Chocolate Kisses

Directions

Cream together shortening, peanut butter, sugar and brown sugar; add eggs, milk and vanilla. Beat well. Add flour, soda and salt; mix well. Shape into balls and roll in sugar. Place on greased cookie sheet. Bake at 375 degrees for 8 minutes. Remove from oven and place a chocolate kiss on top of cookie. Return to oven for a few minutes.

Best Chicken Sandwiches - Chunky Chicken Salad Sandwiches

Ingredients

  • 3 boneless, skinless chicken breasts, 2 cups chicken broth
  • 1 Tablespoon chicken flavored Better Than Bouillon
  • 1 Tablespoon dried basil

Directions

Rub chicken with basil on both sides and place in Zip bag. Refrigerate 2 hours.

Place chicken, broth, and flavoring in medium skillet over medium heat. Bring to a boil and cover. Let chicken poach in steam for 10-15 minutes til cooked through but not dried out.

Drain chicken and cool in refrigerator for at least 1 hour. Cube chicken into 1/4 inch cubes;

Mix in medium sized bowl;

Ingredients

  • chicken cubes
  • 1 large vidalia onion, chopped
  • 2 plum tomatoes, seeded and diced
  • 2 teaspoons dried basil
  • 2-3 Tablespoons mayonnaise or Miracle Whip

Directions

Mix well and place on four slices toasted bread or opened rolls. Makes 4 servings.

Peanut Butter Macaroons

Ingredients

  • 1/2 cup sugar
  • 1/2 cup white corn syrup
  • 1 cup peanut butter
  • 2 cups corn flakes (heaping)

Directions

Combine sugar, corn syrup and peanut butter. Heat until hot, but do not boil. Add corn flakes and stir quickly until just well mixed. Then drop by tablespoon on waxed paper.

Quick and Easy Ravioli and Vegetables

I made and served this meal in less than half an hour, including cleaning all the dishes used in its preparation!

Ingredients

  • Frozen Ravioli (I used 1/2 cheese and 1/2 portabella mushroom ravioli)
  • 2 medium heads of broccoli
  • Bag of frozen peas w/ pearl onions
  • Italian salad dressing (I used a kind with basil and romano in it)
  • Parmesan Cheese

Directions

Put a large pot of water on high.

While you are waiting for your water to boil wash and cut your broccoli.

Once water is brought to a boil add ravioli (I fed 4 people and put in 40 ravioli) and add Broccoli.

Boil for 3-5 minutes (or how ever long your frozen ravioli directions call for on the bag).

Finally add the frozen peas, these do not need long to cook, less than a minute.

Strain water, and serve and garnish with parmesan.
