Ingredients
- 1 1/2 lb. ground beef
- 1/2 cup chopped onion
- 1/2 cup chopped green pepper
- 1/2 cup chopped celery
- 1 Tbsp. vinegar
- 1/4 tsp. Tabasco sauce
- 1/2 tsp. Worcestershire sauce
- 16 oz. can pork and beans
- 1 Tbsp. packed brown sugar
- 1 tsp. garlic
- 1 tsp. paprika
- 3/4 cup water
- 10 oz. package frozen peas or lima beans, thawed
- 6 oz. can tomato paste
Biscuit Topping:
- 1 1/2 cups unbleached flour
- 2 tsp. baking powder
- 1/4 cup margarine
- 1/2 cup milk
- 10-12 (1/2 inch) cubes cheddar or American cheese (if desired)
Directions
Heat oven to 400 degrees F. In 10 inch oven-proof fry pan, brown ground beef, onion and green pepper. Drain grease. Add remaining ingredients except biscuit topping; simmer while preparing biscuits. In medium bowl, combine flour, baking powder, cut in butter. Add milk; stir with fork until soft dough forms. Turn dough onto floured surface; sprinkle with flour. Knead gently until no longer sticky (10-12 times). Roll or press into 1/2 inch thickness. Cut with 2 inch floured cutter. Place cheese cube in center of each biscuit, fold and seal. Arrange biscuits over hot meat mixture. Bake 20-25 minutes until deep golden brown. Serve.
