Chicken San Marino
- 6 whole chicken breasts
- 12 slices cheese (your choice)
- 12 thin slices ham
- 4-6 Tbsp. margarine
- fine dry bread crumbs
- 1 egg
Bone and skin chicken breasts. Cut in half and pound. Wrap chicken breast around the ham with the cheese inside the ham. Coat with flour, shaking off excess. Dip in egg then roll in bread crumbs (may refrigerate, covered, for several hours). Melt margarine in skillet and brown chicken. Add more margarine to keep rolls moist. Arrange in baking dish. Bake 350 degrees F, uncovered, for 15 minutes.
