Ingredients

  • 3 cups peeled, chopped apples
  • 2 cups sugar
  • 1/2 cup apple juice
  • 3 eggs
  • 3/4 cup vegetable oil
  • 1 tsp. vanilla
  • 3 cups flour

  • 2 tsp. apple pie spice
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 2 cups coarsely chopped pecans
  • 1/2 lb. each red and green halved candied cherries
  • 1/2 lb. diced candied pineapple

Directions

Line 3 loaf pans with wax paper. Grease and set aside. In a large bowl combine apples, sugar and apple juice. Let set for 15 minutes. Add eggs, oil and vanilla; mix well. Combine flour, spice, baking soda and salt. Fold in pecans, cherries and pineapple. Pour into prepared pans. Bake at 350 degrees F for 55-65 minutes or until a toothpick comes out clean. Cool.
