Enchilada Bake

Ingredients

  • 1 lb. lean ground beef
  • 1 large onion, chopped
  • 2 cups chunky salsa
  • 1 can black beans, drained and rinsed (15 oz.)
  • 1/4 cup Zesty Italian dressing
  • 2 packages taco seasoning mix
  • 6 flour tortillas (8 inch)
  • 1 cup sour cream
  • 1 package Mexican style shredded cheese (8 oz.)

Directions

Preheat the oven to 400 degrees F. Brown the meat and onions together and drain. Mix the salsa, black beans, dressing and taco seasoning with the meat. Arrange 3 flour tortillas, single layer, on the bottom of a 9x13 inch baking dish. Layer the meat mixture, sour cream and cheese on top of the tortillas. Repeat layers and cover with foil. Bake covered for 30 minutes. Remove the foil and bake an additional 10 minutes or until the cheese is melted. Remove and let stand for 5 minutes before cutting to serve. May serve with lettuce, tomatoes, additional cheese and salsa.
