Does anyone have a recipe for homemade chili (chili beans) that includes carrots and celery. I have tried some chili that included these ingredients and it gave it a little sweet taste, I would love to have a recipe. Can anyone help?

This is my Cheese, Chicken Vegie Chili
I take a bag of the frozen mixed vegies (broccoli, colliflower and carrots) and let it thaw completely. I use different kinds of beans depending on what I find in the pantry. I used black-eyed peas one time and it turned out great. Cube and saute the chicken in vegetable oil first. (I cheat and use the McCormick's chili mix, so just follow the other directions on the back of this packet.)
Add the tomato sauce, chili mix, thawed vegies, whatever beans you choose. Let this cook for a good 30 minutes to an hour then add the about 1-2 cups of shredded cheddar cheese, depending on how cheesy you like it, and allow cheese to melt. Now it's ready to serve. This makes a really good variation to the traditional chili. It's kind of sweet, but still has the good chili "kick"!

I always add these vegetables to my chili. First I take around a pound of ground beef, brown it in a large dutch oven pan, and drain well. Then I add at least 1/2 of a head of diced celery (make sure you dice the green leaves too), 1-2 large diced onions, two grated carrots, a diced green pepper, and a couple of diced garlic cloves. I allow this to sweat over low-medium heat until the veggies are transparent. I add 1-2 quarts of canned tomatoes now, along with as much rinsed and drained (cooked) beans as you like. Then add your spices (I'm not going to list them, since everyone likes differing amounts and types.) Allow to cook so flavors mellow. Lastly, I add 1-2 cans of condensed tomato soup. The soup thickens the chili and gives it a great consistency. Serve with crusty homemade bread. YUM. This chili has meat, yet is loaded with vegetables. Everyone who eats it loves it and comes back for seconds.

I get the idea that you do not like the sweet taste, is that correct? Leave out the carrots, and it won't be too sweet. I have noticed that if I get a few too many grated carrots in Broccoli/cheese soup it is a little sweet for my taste.
My chili: brown a pound of ground beef, add a chopped onion, some chopped celery,a quart of my frozen diced tomatoes. A can of dark red kidney beans,a little garlic, and 1-2 Tbls of chili powder, according to your taste. A little salt to taste.
Simmer a while so the tomatoes cook through.

If you will take the carrots, etc. and chop them finely in a food chopper or knife and throw them into the chili as it cooks, it will add a wonderful flavor to the chili and be virtually undetectable.

I use brown sugar, and it has another great advantage, it cuts down on the acidity of the tomato if you use them

Don't have any great recipe, but you could put a little brown sugar in it to sweeten if you like that taste.
