- 1 cup grated zucchini
- 1 egg
- 1/2 cup flour
- 1/8 tsp. salt
- 1 tsp. sugar
Beat egg well. Mix flour, salt and sugar together, sift over the zucchini and fold into the egg. Drop from tablespoon onto greased griddle, flatten with back of spoon and cook until done through, turning to brown second side.

My family loves zucchini pancakes. I also add parmesan cheese.
