Rum Balls

Ingredients

  • 2 1/2 cups crushed vanilla wafers
  • 3 Tbsp. White karo syrup
  • 2 cups chopped nuts
  • 1 cup confectionery sugar
  • 2 Tbsp. Cocoa
  • 1/4 cup Rum

Directions

Mix wafers, sugar, cocoa, and nuts. Add syrup and rum. Shape into balls and roll in confectionery sugar.

Festive Rum Balls

Quick and easy to make without cooking. I also make these and package in pretty boxes to give as gifts at Christmas time. Not sticky and sweet like some other recipes. Worth a try!

Ingredients:

  • 500 grams (17.6 oz.) plain maderia cake*
  • 1/2 cup icing sugar (powdered sugar)
  • 1 cup desiccated coconut
  • 1/2 cup cocoa powder (Sifted)
  • 1 egg yolk
  • 1/2 cup (or thereabouts) rum or brandy
  • 1/2 cup chocolate sprinkles
  • 1/2 cup coconut (extra)

*Editor's Note: Maderia cake is a basic rich cake originating in England. It typically has vanilla or lemon flavors. A white or vanilla cake should be an acceptable substitute.

Directions

Crumble cake into a large bowl. Mix in icing sugar, coconut, and sifted cocoa powder. Add the beaten egg yolk and enough rum or brandy to moisten the ingredients.

Using wet hands, roll into small balls and then roll in sprinkles or coconut to coat. (I make 1/2 with each coating.) Chill until required.
