- 1 cup vegetable oil
- 1/4 cup sugar
- 1/4 cup brown sugar
- 1 cup molasses
- 1 egg
- 3 cups flour
- 1 1/2 tsp. baking soda
- 1 tsp. cinnamon
- 1 tsp. ground ginger
- 1 cup water
- 1/2 tsp. salt, opt.
Beat together oil and sugars. Add molasses and egg; mix well. Sift together flour, baking soda, cinnamon, ginger and salt. Stir into the molasses mixture, alternately with the water. Fill greased of paper-lined muffin tins 2/3 full. Bake at 350 degrees F for 20-25 minutes or until muffins test done. Let cool 10 minutes before removing to a wire rack.
