Vegan Cupcake Recipe

My son is getting married 6 September '09 and we have two vegan guests attending. They cannot eat the normal wedding cake, therefore I need a recipe to make some cupcakes suitable for a vegan diet.

Order the VCTOTW Vegan Cupcakes Take Over The World book. Its the best guilt free cupcake recipe book ever written. I use it all the time there are over 75 different varies of cupcakes to choose from. Its so wonderful that it even fools non-vegans. Trust me. :]

Ground Flaxseed can be used to replace eggs in baking It is 1 table spoon flaxseed to 3 tablespoons of water mix it together until smooth. This will replace one egg.

You are very thoughtful to want to prepare vegan cupcakes for these two guests. I will say as a former vegetarian, that if they are attending a wedding of a couple that are not vegans, they will know that there is a normal wedding cake and they should understand this.

My concern is that if you go through the trouble of making a couple of vegan cupcakes, what if another guest eats them before the vegan couple arrives? Also, it would not look so good having special food just for them, and not sharing with the rest of the guests...many may be curious and want to try.

My suggestion, then, is to have a nice platter of in-season fruits. The vegan couple will enjoy this as their dessert. Also, everyone can partake. Many other guests may not wish to eat cake and have fruit instead, as well.

Just my thoughts. Good luck w/ the wedding!

My daughter is allergic to many foods, here is the recipe I use: 190g all purpose flour, 3g salt, 200g white sugar, 20g unsalted cocoa powder, 5g baking soda, 75ml veg oil, 15ml vinegar, 5ml vanilla extract, 235 ml cold water, 85 g semi sweet choc chips. I have changed the last item many times to dried fruit. You really cannot taste the vinegar in these, they are lovely. I got this recipe from the net, but I have now had to put an egg replacer as the vinegar has barley in it, which is not wheat and gluten free. Otherwise, they are very good, hope this helps.
