This always goes over good at church potlucks or family get-togethers!
Ingredients
- 1 cup campanelle pasta or pasta of choice
- 1/2 cup finely chopped onion
- 3 slices of bacon
- 1 tsp. olive oil
- 1-1/2 Tbsp. butter
- 2 Tbsp. flour
- 1/4 cup cream sherry wine
- 3/4 cup chicken stock
- 1 cup half and half cream
- 1 tsp. coarse salt
- 1 tsp. garlic pepper
- 1 dash nutmeg
- 1 dash hot sauce
- 1-1/2 cups gruyer cheese, grated
- 3 oz. gorgonzola cheese, crumbled
- 2 oz. smoked gouda cheese, grated
- 3/4 cup bread crumbs
- 1/4 cup asiago or Parmesan cheese
Directions
In large saucepan, cook pasta and drain well. While pasta is cooking, in a small nonstick skillet, crisp bacon and crumble. Add onions and olive oil and cook until translucent. In large saucepan, over very low heat, melt butter. Whisk in flour until smooth, add sherry, chicken stock, cream, salt and pepper, nutmeg, hot sauce and cheese. Stir constantly in a figure eight motion until cheese is melted. Remove from heat and add onion and pasta, toss gently. Pour into a buttered three-quart casserole dish. Combine bacon, bread crumbs and asiago OR parmesan cheese and sprinkle on top. Bake at 350 degrees F, 15-20 minutes (until edges are bubbling and top is golden).
