I've managed to accumulate a lot of recipes! I'm looking for recommendations on inexpensive (possibly free?) computer software to organize and manage the recipes better. It'd be nice if I could print them out and make a shopping list, too.

Mexican Recipe with Hot Peppers and Carrots

Last year my husband went to into Mexico for the day, and had a dish of hot peppers and carrots that he thought were in vinegar (?). I am told that it is a traditional Mexican dish. Does anyone have a recipe for this. He just loved it. Thank you!

Thanksgiving Butter Rolls

Thanksgiving Dinner is incomplete without my Family's favorite:

BUTTER ROLL

Ingredients

  • 2 tablespoons sugar
  • 1 teaspoon vanilla
  • 2 tablespoons butter

Directions

Mix these ingredients into dough as if you were making biscuits. Pinch off a small amount of dough and roll out to saucer size. Fill with these ingredients and fold over all four corners.Place in a baking dish and bake until they begin to brown on top.

Sauce for Butter Roll

Ingredients

  • 2 1/2 cups milk
  • 1 cup sugar
  • 2 tablespoons flour
  • 1 stick butter
  • 1 tablespoon vanilla

Directions

Cook until thickened; pour over cooked butter rolls.

Light Carrot-Raisin Salad

Yield: 8 servings

Ingredients

  • 3 cups coarsely shredded carrots
  • 1 cup diced unpeeled Gala or Empire apples
  • 1/2 cup thinly sliced celery
  • 1/2 cup dark raisins

Dressing Ingredients

  • 1/2 cup nonfat or light mayonnaise
  • 1/4 cup nonfat or light sour cream
  • 1 tablespoon sugar substitute or sugar

Directions

Place carrots, apple, celery, and raisins in a medium bowl and toss to mix. Combine the dressing ingredients in a small bowl and stir to mix well. Add the dressing to the salad and toss to mix. Serve immediately or cover and refrigerate for several hours before serving.

Nutritional Information Per Serving (2/3-cup per serving): Calories: 68, Carbs: 16 g, Cholesterol: 0 mg, Fat: 0.2 g, Saturated Fat: 0 g, Fiber: 1.8 g, Protein: 1.2 g, Sodium: 129 mg, Calcium: 26 mg

Diabetic Exchanges: 1 Vegetable, 3/4 Fruit

Mexican Salad

Ingredients

  • 1 lb. ground beef
  • 1 (15 oz.) can of Mexican style beans or red kidney beans (drained)
  • 1 head lettuce (shredded)
  • 4 tomatoes (sliced)
  • 1 onion (chopped)
  • 4 ozs. Cheddar cheese (shredded)
  • 1 large avocado (peeled and cubed)
  • 1 bag tortilla chips

Dressing for salad: 1000 Island or French, with hot sauce added (to your liking).

Directions

Brown ground beef and add beans. Simmer 10 minutes and let cool. In a larger bowl, mix lettuce and onions. Add beef mix; top with tomatoes, avocado and cheese. Sprinkle crushed tortilla chips on top of salad. Serve with dressing. Serves: 6

Apple Fritters

Ingredients

  • 2 1/2 cup all purpose flour
  • 2 tsp. baking powder
  • 1 tsp. salt
  • 1/2 cup non-fat dry milk
  • 1/3 cup sugar
  • 2 eggs
  • 4 cup water
  • 2 cup apples (chopped and pared)
  • Cooking oil
  • Sugar

Directions

In a mixing bowl, combine first 5 ingredients. Lightly beat eggs with water; add to dry ingredients and stir just until moistened. Fold in apples. In a skillet, heat oil to 375 degrees. Drop batter by teaspoonsful into oil and fry until golden brown. Drain on paper towels. Roll in sugar. Serve warm.

Royal Biscuits

Ingredients

  • 2 cup flour
  • 4 tsp. baking powder
  • 1/3 tsp. salt
  • 4 Tbsp. shortening
  • 3/4 cup milk or half water and half and half

Directions

Sift dry ingredients; add shortening, salt, baking powder and then add the liquid to make soft dough. Bake at 475 degrees about 12 minutes or until nice light brown.

Onion Pie

Ingredients

  • 2 sleeves any butter crackers
  • 3 large onions (I like sweet onions)
  • 3 Tbs. vegetable oil
  • 1/2 cup melted butter
  • 1 cup milk
  • 2 eggs
  • 8 oz. shredded cheese

Chop onions and saute in oil.

Melt butter, crunch up crackers, mix together crackers and butter and press into baking dish for the crust (save some for the top).

Combine milk, cheese, salt, pepper, and eggs and heat until cheese starts to melt.

Pour milk mixture into onions and mix well.

Pour into the crust, sprinkle cheese and reserved crackers over the top.

Bake at 350* for 45 mins. Let set for 15 mins.

You can play with this recipe and add other ingredients. I have added potatoes or garlic or mushrooms or what ever!

You will be surprised how many people will love this! It's been a hit at many potluck dinners!

Oatmeal Rolls

Ingredients

  • 1 1/4 cup water
  • 1/4 cup honey
  • 1 Tbsp. margarine
  • 2 2/3 cup bread flour
  • 1 cup oatmeal
  • 1 tsp. salt
  • 1 Tbsp. yeast

Directions

Mix in order suggested for your bread machine. Use dough cycle.
