Cream of Tomato Soup

This is one my dad would have liked. He loved fresh tomato soup.

Ingredients:

  • 2 Tbsp. margarine
  • 2 Tbsp. onion
  • 3 Tbsp. flour
  • 2 tsp. sugar
  • 1 tsp. salt
  • 1/8 tsp. pepper
  • dash garlic, basil, oregano and thyme
  • 2 cups tomato juice
  • 2 cups milk

Directions:

Saute margarine and onion. Blend in flour, sugar, salt, and seasonings. Remove from heat. Gradually stir in tomato juice. Bring to a boil, stirring constantly for 1 minute. Stir hot tomato mixture into 2 cups cold milk. Heat to almost boiling and serve.

Servings: 3-4
Prep Time: 25-30 Minutes
Cooking Time: 20 Minutes

Robin,
I am always looking for homemade soup recipes that I can make for casseroles etc. I have high blood pressure and can not use the can soups. Do you think this soup will work as a sub for a can of soup?

You didn't explain how to prepare the tomatoes for the fresh juice.
