This word, which has come down to us from the Persian, stchar, through India, describes various kinds of fruit, vegetables, very young and tender buds of palm cabbage (palmetto), or bamboo shoots, pickled in various ways and strongly spiced. It is generally colored with saffron. This condiment is greatly valued in the whole of Indian Archipelago, in Mauritius and in the Bourbon island (Reunion Island).
