Grandma's Soft Raisin Cookies

Ingredients

  • 1 1/2 cups raisins
  • 1 cup water
  • 1 cup white sugar
  • 1/2 cup brown sugar
  • 1 cup margarine or Crisco
  • 3 eggs
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 3 1/2 cups flour
  • 1/2 cup white sugar
  • 1/2 cup nuts, opt.

Directions

Bring raisins and water to boil, then simmer until all water is absorbed. Cool. Mix sugars and shortening until creamy. Add eggs and beat until smooth. Add baking powder, soda and salt to flour. Add flour mixture to creamed mixture and stir until smooth. Add cooled raisins (and nuts, if desired). Roll dough in balls the size of walnuts or larger. Roll balls in granulated sugar. Place on greased cookie sheets 2 inches apart. They will flatten while baking at 350 degrees F. Bake about 15 minutes or until light brown.
