Vi's Tacos 1950s

Ingredients and Directions

My children didn't like meat when they were young, so I made their tacos with Campbells Bean with Bacon soup, (just add enough water to make the beans into a spreadable paste.) Add chopped lettuce, shredded cheddar cheese.

As they got older and liked meat I added the Bean and Bacon soup right from the can to a pound of hamburger that has been browned with 1/2 cup chopped onion, cooked left over veggies, like carrots, corn, potato or even rice. What ever I have on hand.

I warm the corn tortillas with a small amount of butter on each side. Fill them with the meat, bean mixture add the cheese and now I add black olives and chopped tomatoes, lettuce, onion, or whatever you like. Add hot sauce or salsa of your choice. The tortillas are soft for this recipe. Sometimes we still like to have a food "memory" and make the tacos like we did in the 50's.

Vi's Lemon Cream Cheese Bars

Ingredients and Directions

1 box lemon cake mix (I used Betty Crocker, follow directions except don't add oil) with 4 med. eggs, 1/3 package cream cheese. Bake in a jelly roll pan or I used a heavy duty cookie sheet with edge. COOL. Top with 2-2/3 packages cream cheese and one can french vanilla frosting (I had Pillsbury) and about 1 1/2 Tbsp. lemon juice. Beat until smooth. Spread on cooled cake and refrigerate. Cut into squares to serve.

Popovers

Ingredients

  • 2 eggs
  • 1 cup flour
  • 1 cup milk
  • 1 teaspoon salt

Directions

Mix together (small lumps O. K.)

Makes 9. Fill greased muffin tins 2/3 full.

Bake in oven (NOT PREHEATED) at 450 degrees F for about 20-25 minutes, then lower temperature to 350 degrees F. Bake until golden brown. These are good served hot with butter/jam or filled with whipped cream, drizzled with chocolate sauce, or dusted with powdered sugar or fill with creamed tuna or seafood.

Curry Dip

Ingredients and Directions

Mix together 1/2 cup pineapple yogurt, 1/2 cup mayonnaise, 1 Tbsp. orange- flavored gelatin (dry) and 3/4 teaspoon curry powder. Refrigerate for at least 30 minutes.

Cream Puff Dessert

I found this years ago and it is great for family gatherings, luncheons, funerals, or anywhere you want to have something very special.

Ingredients

  • 1 cup Flour
  • 1 cup Water
  • 1/2 cup Butter
  • 4 Eggs

Directions

Add butter to water in sauce pan and bring to boil. Lower heat. Stir in flour until pasty. Take off heat and add eggs one at a time. Beat until smooth. Grease 13x9 inch glass dish and spread batter in bottom and very thinly up sides of the dish. Bake at 400 degrees F for 25-35 minutes until slightly browned. Crust will puff up and sink down when cool.

Filling:

Ingredients

  • 2 1/2 cups milk
  • 8 oz cream cheese, room temp
  • 1 large box vanilla instant pudding

Directions

Beat cream cheese with mixer. Add pudding and milk ALTERNATELY a little at a time. Beat 3 minutes. Pour into cooled shell.

Top with cool whip.

Drizzle with chocolate syrup on top.

Refrigerate. Enjoy!
