St. Valentine's Day Punch

Ingredients

  • 12 Ice Cubes
  • 2 cups chilled grape juice
  • 1 qt. (4 c.) chilled orange juice
  • 2 qts. (8 c.) ginger ale
  • 1/4 cup sugar
  • 2 oranges

Directions

Put 12 ice cubes in a punch bowl. Pour over them the grape juice, orange juice and ginger ale. Add the sugar and mix very well. Peel and slice the oranges. Remove all seeds. Float the orange slices in the punch bowl. Serves: 18

Sandwich Meat Fillin'

Ingredients

  • 2 pound cubed cooked chicken, turkey, or pork
  • 3 stalks celery (chopped)
  • 1 medium chopped onion
  • 1 can cream of chicken soup
  • 1 chicken boullion cube
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 1/2 cup water, plus 1 soup can of water

Directions

Put meat, 1 1/2 cups water, celery, onion, salt and pepper in frying pan, Simmer until done. Add soup and 1 can of water, and the boullion cube. Simmer 1 hour. May add flour to thicken if needed, Serve on buns. May also put everything into a slow cooker. Then cook until vegetables are done.

Homemade Egg Substitute

Ingredients

  • 6 egg whites
  • 1/4 cup powdered nonfat milk
  • 1 tablespoon oil
  • few drops yellow food coloring

Directions

Combine all ingredients in a mixing bowl. Blend until smooth. Store in a jar in refrigerator up to 1 week. Also freezes well. To prepare as scrambled egg, fry slowly over low heat in a nonstick pan, 1/4 cup equals 1 egg. Pour into ice cube trays and freeze. When frozen, run hot water over bottom of tray and take the ice cubes out and put in freeze bag. Two cubes equal 1 egg. This makes 1 cup.

Sweet And Spicy Pecans

Ingredients

  • 2 cups pecan halves
  • 2 tablespoons melted butter
  • 1 tablespoon sugar
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon dried crushed red pepper
  • 1/8 teaspoon salt

Directions

Toss pecans in butter.combine remaining ingredients. Sprinkle this over pecans, tossing to coat. Spread on a cookie sheet. Bake at 325 degrees F for 15 minute; stirring occasionally. Cool. Eat and enjoy as they do not last long.

Tuna Salad Sandwiches

Ingredients

  • 1 can tuna
  • 2 hard-cooked eggs, chopped
  • 2 sweet pickles, chopped
  • 1/4 cup finely cut celery
  • 1/2 tsp. onion juice
  • Mayonnaise
  • 2 eggs
  • 2 Tbsp. cream
  • 4 Tbsp. shortening

Directions

Combine tuna, eggs, pickles, celery and onion juice, using enough mayonnaise to hold together as desired, and spread on bread. Top with another slice of bread. Beat the 2 eggs until light and add the cream. Into skillet, put 4 Tbsp. vegetable or canola oil, and after dipping the sandwiches carefully into the beaten raw egg mixture, brown them in the hot fat.

A Simple Valentines Day Cake

No need to have a heart shaped cake pan to make this easy cake!

You Will Need:

  • 1 Square Cake Pan
  • 1 Round Cake Pan
  • 1 Box of your favorite cake mix
  • 1 Can of your favorite icing (or make your own)
  • Decorative sprinkles, candy red hots, candy conversation hearts, etc.
  • How To Make a Heart Shaped Cake:

  • Grease and flour cake pan bottoms.
  • Mix cake mix as directions require and pour into square and round pan.
  • Bake as cake mix directions require.
  • Let cakes cool. When they are cool place the square cake on your serving dish so it looks like a diamond shape and then cut the round cake in half. Put one half of the round cake on each side of the square cake so that it looks like a heart.
  • Ice cake and decorate with assorted candies.
  • It is that easy!

    Raspberry Vinaigrette

    Ingredients

    • 1/2 cup raspberry vinegar
    • 1/3 cup sugar
    • 3/4 cup olive oil
    • 1/2 teaspoon Dijon mustard
    • 1/8 teaspoon pepper

    Directions

    In a small saucepan, cook vinegar and sugar over low heat until sugar is dissolved. Pour in a jar with a tight fitting lid. Add remaining ingredients. Cool for a little while. Cover and shake well. Chill. Shake before using over your favorite salad.

    County Apple Cobbler

    Ingredients

    • 1 box (18.25 oz.) yellow cake mix
    • 2 (21 oz. each) cans Comstock Country Apple pie mix
    • 1 (5 oz.) can evaporated milk
    • 1/2 cup butter, melted
    • 1/2 tsp. cinnamon/sugar mixture
    • Fresh ground nutmeg to sprinkle over top
    • 1/2 cup chopped walnuts or pecans

    Directions

    Preheat oven to 350 degrees F. Lightly butter a 13x9-inch baking dish. Spread apple pie mix evenly over prepared dish. Sprinkle with cinnamon/sugar mixture. Evenly spread cake mix and then pour evaporated milk over all. Drizzle melted butter over all and then sprinkle with fresh ground nutmeg. Sprinkle chopped nuts over top and bake for about 45 minutes until light and golden brown. Serve warm or cold with vanilla ice cream.

    Hot Spicy Cranberry Punch

    Ingredients

    • 2 qts. cranberries
    • 2 qts. water
    • Cook until the cranberries pop and then strain. add:
    • 2 1/2 cups sugar
    • Juice of 1 lemon
    • 3 sticks of cinnamon
    • 15-20 whole cloves

    Directions

    Let simmer a little bit and then strain out the spices. Just before serving add 4 cups of brewed tea. The tea should not be too strong. Everything, with the exception of the tea, could be made up ahead of time and heated, adding the tea just before serving.
