Beef Stroganoff

Ingredients:

  • 1 stick butter
  • 1 pkg. dry onion soup mix
  • steak (as much as you like or may substitute the steak with ground beef)
  • 2 cans cream of mushroom soup
  • 2 cans beef noodle soup
  • 1 carton sour cream (16oz.)
  • 1 pkg. wide egg noodles

Directions:

Cut the steak in strips and saute' it with the dry onion soup mix and butter. Combine the cream of mushroom soup, beef noodles soup and sour cream and simmer over low heat. Cook the noodles and combine them with the sauce and serve.

Ingredients

  • 1 lb. tenderloin
  • 1/4 cup butter
  • 6 oz. (2 cups) mushrooms
  • 1/2 cup chopped onion
  • 1 can beef broth
  • 1 cup sour cream
  • 2 1/2 Tbsp. flour
  • 1/2 tsp. salt
  • pepper, to taste

Directions

Cut meat in 1/4 inch strips; brown quickly in hot butter. Push to side of skillet; add mushrooms and onions. Saute' them. Add broth and heat to just boiling. Blend in sour cream flour mixed Stir into broth and cook, slowly stirring constantly until mixture thickens. Serve over noodles and rice.

Ingredients:

  • 1 Tbsp. flour
  • 1/2 tsp. salt
  • 1 lb. sirloin
  • 2 Tbsp. butter
  • 1 can sliced mushrooms
  • 1/2 cup chopped onion
  • 1 clove garlic, minced
  • 2 Tbsp. butter
  • 3 Tbsp. flour
  • 1 Tbsp. tomato paste
  • 1 1/4 cup beef stock
  • 1 cup sour cream

Directions:

Cut meat into 1/4 inch strips. Combine flour and salt and dredge meat. Add butter to skillet and brown meat. Add mushrooms, onion, and garlic. Cook 3 or 4 minutes. Remove meat mixture to plate. Add butter to drippings, blend in flour. Add tomato paste, stir well. Pour in cold meat stock, cook and stir till thickened. Return meat mixture to sauce, add sour cream. Heat briefly. Serve over hot noodles or rice. Serves 4.

Recipe: Beef Stroganoff

Using lean top round, plain low-fat yogurt, and very little added salt makes this a heart-healthy dish.

Ingredients:

  • 1 lb lean beef (top round)
  • 2 tsp vegetable oil
  • 3/4 Tbsp finely chopped onion
  • 1 lb sliced mushrooms
  • 1/4 tsp salt
  • to taste pepper
  • 1/4 tsp nutmeg
  • 1/2 tsp dried basil
  • 1/4 C white wine
  • 1 C plain low-fat yogurt
  • 6 C cooked macaroni, cooked in unsalted water

Directions:

1. Cut beef into 1-inch cubes. Heat 1 teaspoon oil in a non-stick skillet. Sauté onion for 2 minutes.
2. Add beef and saute for additional 5 minutes. Turn to brown evenly. Remove from pan and keep hot.
3. Add remaining oil to pan; saute mushrooms.
4. Add beef and onions to pan with seasonings.
5. Add wine, yogurt; gently stir in. Heat, but do not boil.
6. Serve with macaroni.

Note: If thickening is desired, use 2 teaspoons cornstarch; calories are the same as flour, but it has double thickening power. These calories are not figured into the nutrients per serving.

Yield:5 servings--Serving Size: 6 oz

Saturated fat: 3 g
Cholesterol: 79 mg

Ingredients

  • 2 lb. flank steak (tender roast or other suitable cut)
  • 2 cups sour cream (or plain yogurt)
  • 2 cups beef consomme
  • 1 cup mushrooms
  • 2 Tbsp. (or to taste) soy sauce
  • 1 medium onion, diced
  • 2 Tbsp. tomato paste
  • olive oil
  • 2 Tbsp. flour
  • salt and pepper

Directions

Cut steak into finger size pieces. Saute chopped onions in oil. Add steak and cook a bit. Sprinkle on flour and blend with juices, stirring often. Add mushrooms, then consomme and sour cream alternately. Stir in soy, then add tomato paste until the sauce has a warm brownish tint. Salt and pepper, to taste. Serve over rice.

Ingredients

  • 1 lb. round steak, trimmed
  • 1/4 cup butter
  • 1 lb. fresh mushrooms, sliced
  • 1 lg. onion, chopped
  • 1 cup beef broth
  • 2 1/2 Tbsp. flour
  • 1 cup sour cream
  • salt and pepper, to taste

Directions

Slice steak into thin strips. Brown steak in butter in large skillet. Remove from pan. Saute' mushrooms and onion in pan drippings in skillet. Stir in steak and broth, heating to boiling point. Combine flour and sour cream in small bowl, blending well. Add sour cream mixture to steak, blending well; season with salt and pepper. Cook over low heat until heated through, stirring occasionally. Serve over buttered noodles.

If you can find a copy of the Betty Crocker notebook-style cookbook (red) that was popular in the 1970's, there is a very good recipe for stroganoff that is simple and tasty. There are very few ingredients, and it does not use a can of high-sodium soup like some of the modern day recipes use. (05/02/2007)

Here's a recipe that's really easy that my family loves! It's also easy to adapt for the crock pot. You can use either stew meat or ground beef. I love to use stew meat in the crock pot. Enjoy!
  • 1 Pkg. egg noodles cooked
  • 1 lb ground beef (can also used stew meat)
  • 1 large carton sour cream
  • 1 can cream of mushroom soup
  • 1/2 pkg. onion soup mix
Cook ground beef. Drain. Add all other ingredients except noodles together and cook until bubbly. Pour over noodles and enjoy! (05/03/2007)

  • 1 1/2 lb. lean beef (sirloin works well)
  • 3 Tbsp. butter
  • 1 cup sliced mushrooms
  • 1 large onion, sliced
  • 2 Tbsp. flour
  • 2 cups beef bouillon or consomme
  • 2 Tbsp. tomato paste
  • 1 tsp. dry mustard
  • 3 Tbsp. sherry
  • 2/3 cup sour cream
Remove all fat and gristle from beef and cut it into narrow strips about 2 1/2 in. long, 3/4 in. wide and between 1/4 and 1/2 in. thick. Dust strips with salt and pepper and set them aside for about 2 hours, but not in the refrigerator. When you are ready to prepare the dish, melt 2 Tbsp. of the butter in a heavy skillet and saute the mushrooms until tender. Then remove them and set them aside. In the same butter saute the onion until brown and set aside. Add the last Tbsp. of butter and when it is hot put in the strips of beef and sear them on both sides, but leave them rare. Remove them and set aside. Sprinkle the flour into the pan and blend it with the remaining butter, browning it well. Then slowly add the beef bouillon stirring well to form a smooth gravy. Next add the sherry, tomato paste, and dry mustard, blending well. Now return the meat, mushrooms and onions to the pan and let the whole thing simmer very slowly over the lowest possible heat for about 20 minutes. About 5 min. before serving add the sour cream and blend thoroughly. (05/03/2007)

Betty Crocker 1976 Classic Beef Stroganoff
  • 1 lb. beef tenderloin or sirloin steak, about 1/2 inch thick
  • 2 Tbsp.butter or margarine
  • 1/2 lb. mushrooms, washed, trimmed and sliced
  • 1 medium onion, minced (about 1/2 cup)
  • 1 can (10-1/2 ounces) condensed beef broth
  • 2 Tbsp. catsup
  • 1 small clove garlic, minced
  • 1 tsp. salt
  • 3 Tbsp. flour
  • 1 cup dairy sour cream
  • 3 to 4 cups hot cooked noodles
Cut meat across the grain into 1/2-inch strips, about 1-1/2 inches long. Melt butter in large skillet. Add mushrooms and onion; cook and stir until onion is tender, then remove from skillet. In same skillet, cook meat until light brown. Reserving 1/3 cup of the broth, stir in remaining broth, the catsup, garlic and salt. Cover; simmer 15 minutes.

Blend reserved broth and flour; stir into meat mixture. Add mushrooms and onion. Heat to boiling, stirring constantly. Boil and stir 1 minute. Reduce heat. Stir in sour cream; heat. Serve over noodles. (05/14/2007)
