Crockpot Rice Pudding

Apricot Salad

Ingredients

  • 2 packages. orange Jello - dissolved
  • 1 large can pineapple tidbits
  • 1 large can apricots (cut up)
  • 12 large marshmallows (cut up)
Directions

Reserve juice from fruit to use instead of water in Jello. Mix Jello as directed and add fruit and chill.

Topping Ingredients

  • 1/2 cup sugar
  • 1 beaten egg
  • 2 Tbsp. butter

Topping Directions

Cook until thick and cool. Stir in 1 cup Dream Whip and spread over set Jello. Spread shredded cheese on top and chill.

Fennel Mushroom Stir-Fry

Ingredients

  • 1 lb fennel bulb
  • 3 Tbsp. cooking oil
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 1 Tbsp. lemon juice
  • 1/2 cup chopped red onion
  • 1/2 cup chopped sweet red pepper
  • 2 1/2 cups sliced mushrooms
Directions

Chop fennel into large chunks, removing any branches coming out of veggie, remove hard triangle core in middle. (cut in 1/2 to get at core), set aside. Heat oil in pan for 30 seconds. Add salt, pepper, onion and pepper. heat for 1 minute. Add fennel, heat for 3 to 4 minutes. Add mushrooms, stir-fry actively (careful, pan should be pretty full) for 3 minutes. Place into casserole dish, cover with lemon juice and toss lightly.

Rock Candy Stir Sticks

  • 2 cups water
  • 5 cups sugar
  • Drops of food coloring
  • Plastic container lid
  • Wooden coffee stir sticks, bamboo sticks or popsicle sticks

In a large saucepan over medium heat, place water. Bring to a boil and stir in sugar. Continue to boil until mixture reaches 260 degrees F. Remove from heat and let mixture cool for 5 minutes. Pour sugar mixture into glass jar add drops of food coloring. Mix lightly. Punch the sticks through the plastic lid. Set lid over the glass jar so the sticks hang down into the sugar mixture but do not touch the bottom of the jar. Set the mixture aside for 7 days. After 7 days, carefully lift the lid out of the jar and you will find magical rock candy stir sticks. Give the sticks as gifts for grown-ups to stir in their coffee or tea. Kids can us them in hot cocoa. Eating them as a sucker is also fun. Enjoy.

Apple-Raisin Crisp

Ingredients

  • 3 large apples, unpeeled, cored, and sliced thin
  • 1/4 cup raisins
  • 1/3 cup sugar
  • 1 tsp. cinnamon
  • 1/4 cup all-purpose flour
  • 3/4 cup rolled oats
  • 1/2 cup walnuts (optional)
  • 3 tablespoons butter, melted
Directions

In a large bowl, combine the apples, raisins, sugar, cinnamon and 1 Tbsp. of the flour. Stir well to coat the apples with dry ingredients. Transfer mixture to a greased shallow baking dish. In the same bowl, combine the remaining flour, oats, and nuts. Stir in the melted butter or margarine, and mix the ingredients well (it should be crumbly). Sprinkle the oat mixture over the fruit mixture. Bake in preheated 375 degree F oven for 40 minutes or until the crisp is lightly browned. Let stand for 10 minutes before serving.

Kentucky Fried Chicken

Ingredients

  • 3 lb. chicken, cut up
  • 1 Tbsp. salt
  • 1 1/2 cups flour
  • pepper
  • 1 1/2 tsp. baking powder
  • 1 egg
  • 1 1/2 cup milk
Directions

Boil chicken in 2 tsp. salted water, covered. Save broth and drain and cool chicken. Brown flour in 400 degree F oven for 20 minutes. Mix flour with remaining ingredients. Dip chicken in batter and fry in deep fat at 375 degrees F.

Chicken Rice Mix

Ingredients

  • 4 cups uncooked long grain rice
  • 4 Tbsp. dry instant chicken bouillon
  • 1 tsp. salt
  • 2 tsp. dried tarragon leaves
  • 2 tsp. dried parsley flakes
  • 1/4 tsp. white pepper
  • 1 tsp. dried minced onions
  • 1/2 tsp. sugar
Directions

Combine all ingredients in a large bowl and stir until evenly distributed. Put about 1 1/3 cups into three 1-pint containers and label as "Chicken Flavored Rice Mix". Store in a cool, dry place and use within 6 to 8 months. Makes about 4 cups of mix.

To use: Mix 1 1/3 cups Chicken Flavored Rice Mix with 2 cups cold water and 1 Tbsp. butter or margarine in a medium saucepan. Bring to a boil over high heat. Cover pan and reduce the heat to low. Cook for 15 to 25 minutes, or until liquid is absorbed and rice is tender. 4 to 6 servings

Baked Beans

Ingredients:
  • 2 cans pork and beans
  • 1 lb. lean beacon (cut in pieces)
  • 1 med. onion (chopped)
  • 2 med. green peppers (chopped)
  • 1 cup ketchup
  • 1 cup brown sugar

Directions:

Combine all ingredients and put in 2 medium sized or 1 large casserole dish.. Bake, uncovered, at 325 degrees F for 3 hours, stirring occasionally. Uncover the last 30 minutes of cooking.

Sour Cream Cookies

Mix together 1 1/2 cups sugar and 1/2 cup shortening. Add eggs and stir in 1 cup sour cream and 1 tsp. vanilla. Sift together 1/2 tsp. soda, 1/2 tsp. baking powder and 1/2 tsp. salt plus 2 3/4 cups flour. Stir into sour cream mixture. Drop by spoonfuls onto a greased cookies sheet, and bake at 400 degrees F for 8-10 minutes.
