- 6 hard boiled eggs
- 2 Tbsp. mayonnaise
- 2 Tbsp. Poupon mustard
- 1 Tbsp. Louisiana hot sauce, or your choice
- 1 Tbsp. pimientos, mashed
- Salt to taste
Cut the eggs in half. Remove the yolk and set aside. Mash yolks with a fork and add the mayonnaise and the rest of the ingredients. Spoon mixture back into the egg whites and serve on a bed of lettuce, if desired.
