Healthy Ways to Cut Calories. I am looking for some healthy ways to cut calories for my daughter and myself. My husband however, has no way weight problems, due to a very active job. So he probably needs the calories. Anyone else been in this situation? Any advice, meal plans, tips, etc. would be appreciated.

Is there a cooking oil that is better for us?

I heard you can substitute apple sauce for oil but is there an oil that is better for us? I am a diabetic and so is my father, I like to make him pumpkin bread but it calls for 1 cup of oil. I use Splenda for the sugar.

Can you help me?

Egg and Cheese Puffs

Ingredients

  • 4 eggs
  • 1 Tbsp. chopped onion
  • 1/3 cup sifted flour
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 1/3 lb. sharp cheese, cut in small cubes

Directions

Beat eggs and combine with other ingredients. Drop from a spoon into a skillet with hot fat and brown slowly over low heat, about 2 minutes on each side. Very tasty!

Frozen Christmas Salad

Ingredients

  • 2 pkgs. cream cheese (3 oz. size)
  • 1 cup mayonnaise
  • 1 cup cream, whipped
  • 1 can crushed pineapple (20 oz. size) drained
  • 1/2 cup red maraschino cherries, diced
  • 1/2 cup green maraschino cherries, diced
  • 1/2 tsp. pineapple flavoring
  • 2 1/2 cup mini marshmallows

Directions

Soften cream cheese to room temperature. Blend with mayonnaise until smooth. fold in whipped cream (or whipped topping) and gently stir in pineapple, cherries, pineapple flavoring and marshmallows. Spoon into 1 qt. freezer tray. Freeze until firm. Cut into squares and serve on lettuce leaves. This is a generous amount, serving 10-12 nicely.

Christmas Brownies

Ingredients

  • 1 cup sifted flour
  • 1 teaspoon baking powder
  • 1/2 cup butter, melted
  • 12 tablespoons unsweetened cocoa powder OR 4 squares unsweetened chocolate, melted
  • 4 large eggs
  • 2 cups sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon peppermint extract
  • 3/4 cup maraschino cherries, drained and chopped
  • 1/4 cup FINELY crushed peppermint candy (about 11 of the round mints OR about 3 of the 6-inch canes) to sprinkle on top
  • Green decorating sugar to sprinkle on top.

Directions

Sift flour with baking powder. Combine melted butter with cocoa powder or melted chocolate. Add to eggs along with sugar, salt, and peppermint extract and beat until smooth and creamy. Add flour mixture and cherries. Blend all ingredients except crushed peppermint candy and green decorating sugar. Turn into buttered 9x13x2 inch baking pan and bake at 325 degrees F for 35 to 40 minutes. Sprinkle crushed peppermint candy and green decorating sugar on top immediately after removing from oven.

Chocolate Crunch

Ingredients

  • 1/3 cup miniature candy coated chocolate baking bits
  • 1 1/3 cups rice cereal squares
  • 1 cup peanuts
  • 2/3 cup butterscotch chips
  • 1/2 cup chocolate chips
  • 1/4 cup peanut butter

Directions

In medium saucepan, add all ingredients (except peanuts and cereal) and cook over medium heat, stirring constantly until smooth. Remove from heat and add cereal and peanuts. Drop by spoonfuls onto wax paper. Chill 10-15 minutes or until set. Makes about 20 candies.

Unusual Chicken Pie

Ingredients

  • 3 cups cooked chicken, diced
  • 1 baked pie shell
  • 1 tsp. salt
  • 1 1/2 cups celery, chopped
  • 1 1/2 cups bread cubes
  • 3/4 cup mayonnaise
  • 1/4 tsp. butter flavoring
  • 2 Tbsp. lemon juice
  • 1 tsp. dry mustard
  • 1 tsp. Worcestershire sauce
  • 1 cup nuts (opt.)
  • Grated cheese

Directions

Prepare chicken. Bake pie shell. Combine chicken with remaining ingredients except cheese. Mix well. Spoon into pie shell. Sprinkle top with cheese. Bake at 350 degrees F for about 40 minutes or until hot through and cheese is bubbly on top.

Roasted Pecans

Ingredients

  • 2 cups pecan halves
  • 4 Tablespoons (1/2 stick) butter

Directions

Preheat oven to 300 degrees F. Place pecans into a bowl, melt butter and pour over them. Stir to coat nuts. Bake for 20 to 25 minutes stirring every 5 minutes. Remove from oven and salt lightly (optional). Turn out on platter to cool.

**I would recommend real butter for this one.

Cherry Cake

Cherry Cake

Ingredients:

  • 1 regular pkg. miniature marshmallows
  • 1 regular pkg. cherry Jello
  • 1 yellow cake mix (without pudding)
  • 1 can cherry pie filling

Directions:

Sprinkle marshmallows over bottom of 9x13 greased pan. Do not pack them too tightly. Prepare yellow cake mix and pour over marshmallows. Mix cherry Jello with can cherry pie filling. Put over top of cake batter. Bake at 350 degrees for 30-40 minutes.

Cherry Cake II

Ingredients:

  • 2 cup sugar
  • 2 sticks margarine
  • 4 eggs
  • 3 cup self rising flour
  • 1 can cherry pie filling*
  • 1 tsp. vanilla

Directions:

Cream sugar and margarine. Add eggs, 1 at a time, beating well after each addition. Gradually add flour and vanilla. Pour 1/3 of batter into a 9"x13" baking dish. Pour pie filling over the batter. Dab remaining batter by spoonfuls over pie filling. Bake at 350 degrees for 50 minutes.

*Any flavor of pie filling can be used.

Cherry Cake III

  • 1 box Chocolate Fudge or Devil's Food Cake mix
  • 2 eggs beaten
  • 1 can cherry pie filling

Mix above by hand. Pour into greased pan 10x15 inch. Bake at 350 degrees F for 25-30 minutes.

While baking cake, combine in a saucepan:

  • 1 cup sugar
  • 5 Tbsp. Oleo
  • 1/3 cup milk

Bring to a boil and cook 1 minute stirring constantly. Remove from heat and add:

  • 1 cup chocolate chips
  • 1 cup chopped nuts

Spread on cake while both are warm.

Coffee Punch

Ingredients

  • 1 qt. freshly made coffee, chilled
  • 1 qt. chocolate ice cream
  • 1/2 tsp. almond flavoring
  • Few grains salt
  • 1/2 pint whipping cream
  • 1/4 tsp. grated nutmeg

Directions

Chill coffee in refrigerator. To prepare punch, pour coffee into cold punch bowl, add half of the chocolate ice cream, few grains of salt and stir until partially melted. Whip cream until stiff, add flavoring and blend. Fold in whipped cream and remainder of the ice cream. Sprinkle lightly with nutmeg. Makes 12 servings.

French Bread Pizza

Take 1 loaf french bread (sliced down middle to make 2 halves). Now, place 2-3 Grilled Boneless Chicken Breast sliced in strips over ranch dressing.

Sprinkle 1 can whole kernel corn (drained and pat dry with paper towel) over chicken (may not use but 1/2 the can).

Next, sprinkle sliced green onions over corn. Then, 1-2 tomatoes (seeded and chopped) sprinkled over onions.

Place shredded mozzarella and cheddar cheese over onions and sprinkle with parsley and black pepper. Place in oven on 400 degrees F until cheese is melted!

Applesauce Pancakes

Ingredients

  • 2 cups biscuit mix (like Bisquick or generic)
  • 1 egg
  • 1 cup applesauce
  • 1/2 tsp. lemon flavoring
  • Milk to desired consistency

Directions

Add ingredients in order given and fry as usual. Serve with hot maple syrup.
