This is a delicious, spicy way to serve carrots. I usually like my veggies without any embellishment other than a touch of butter, salt and pepper, but this recipe is an exception. In addition, it's very healthy. Carrots, garlic, cinnamon and, cumin are nutritional powerhouses. It's so nice that they go together so well.

Ingredients:

  • 4 large carrots, cut into diagonal slices about 1/4 inch thick
  • 1 clove garlic, minced
  • 1 Tbsp. olive oil
  • 1 cup water
  • 1 tsp. sugar or honey
  • 1/2 tsp. cinnamon
  • 1/4 tsp. each ground cumin and dried thyme
  • 1/8 tsp. ground cloves
  • 2 Tbsp. lemon juice
  • 2 Tbsp. golden raisins

Directions:

Put the sliced carrots, garlic, olive oil, and water in a skillet. Bring to a boil and simmer until the carrots are tender, about 8 minutes.

Mix the sugar and spice and stir them in.

Increase the heat to high, and, stirring constantly, reduce the pan juices to a glaze. Immediately remove the pan from the heat.

Stir in the lemon juice and raisins. Serve
