3 cups onions, coarsely chopped 3 cups potatoes, peeled and cubed 6 1/2 cups Granny Smith apples, peeled, cored and cubed 2 cups chopped, peeled celery 4 cups chicken stock 2 cups cider Salt and pepper to taste Chopped, fresh chives for garnish
Directions:
In large pot, combine onions, potatoes, apples and celery. Add chicken stock and cider. Bring to boiling. Reduce heat. Cover and simmer for 40 minutes or until vegetables are very tender.
