Layered Reuben Casserole
- 16 oz can sauerkraut drained
- 3 medium sized potatoes peeled and parboiled
- smoked sausage cut into "fat" slices
- 1/2 cup Thousand Island dressing ( use more if needed)
- Swiss or mozzarella cheese
Layer in order given in 1 1/2 quart casserole. Bake 25-30 minutes in a 350 degree F oven. Sprinkle Swiss or mozzarella cheese on top. Return to oven for 5-10 minutes or until cheese is melted.

I made this for St. Patrick's Day and it was delicious. I would use double the smoked sausage next time but that is the only ingredient change I would make. I made it in the crock pot on low for about 4 hours layering the ingredients. I added the 1000 island dressing and cheese during the last 1/2 hour. Thank you for a great and easy recipe!
