Carrot Cake

Ingredients
  • 3 eggs
  • 3 cups sugar
  • 1 cup vegetable oil
  • 1 1/4 cup crushed pineapple and juice
  • 3 cups grated carrots
  • 2 cups flour
  • 2 tsp. cinnamon
  • 2 tsp. soda
  • 2 tsp. salt
  • 1 cup chopped walnuts (opt.)
  • 1 cup coconut flakes (opt.)

Directions

Mix eggs, sugar, and oil 2 minutes at medium speed. Add pineapple and carrots. Mix in flour, cinnamon, soda, salt, then add walnuts and coconut. Mix well at low speed. Bake 30-35 minutes at 350 degrees F. fills a 9x13 cake pan. Frost with cream cheese frosting.

Cream Cheese Frosting:

Ingredients

  • 1/2 cup margarine
  • 1 package cream cheese
  • 1/3 cup shortening
  • 2 lb. powdered sugar
  • 2 Tbsp. water or enough liquid to make right consistency.

Directions

All ingredients should be at room temperature. Combine in order given. Liquid required will depend on room temperature and humidity. Makes enough to frost a sheet cake or 8 inch round cake.

I LOVE CARROT CAKE BUT I'VE NEVER HEARD OF Adding pineapple or coconut. any tried it with these ingredients?
