Cheddar Chili Corn Bread
- box corn bread mix (8 oz.)
- 1/2 cup water
- 1 egg
- 1 cup green chilies, chopped (do not drain)
- 1 cup Cheddar cheese, shredded
- chili powder (to taste)
In an 8x8 inch glass baking dish, mix cornbread mix, water, egg and green chilies together, until just blended. Microwave at 100% power for 6-8 minutes or until a toothpick inserted in the center comes out clean. (The top of the cornbread will have a slightly moist appearance.) Sprinkle cheese, evenly, over the hot cornbread. Cover with foil and let stand until the cheese is melted. Sprinkle with chili powder, if desired. Serve immediately.
