Diabetic Pound Cake

I'm looking for a recipe for diabetic pound cake. A delightful lady in my town owns a tiny bakery and asked me if I had such a recipe but search as I might I was unable to find one. The problem is that sugar is required to produce a nice brown crust and I can find no way around this. If anyone has a workaround I'd love to know about it.

What is Hamburger?

There are so many mouthwatering recipes on this site that use "hamburger". Is this just ground beef or is it a special mixture? We only know hamburger as a ready made frozen or fresh meat patty. Can anyone help?

Chocolate Chip Cookie Mix In A Jar

Ingredients

  • 1 3/4 cup flour
  • 3/4 tsp. baking soda
  • 3/4 tsp. salt
  • 1 1/2 cup chocolate chips
  • 3/4 cup packed brown sugar
  • 1/2 cup sugar

Directions

Combine flour, baking soda, and salt in small bowl. Place flour mixture in 1 quart jar. Layer remaining ingredients in order listed above. Pressing firmly after each layer. Seal with lid and decorate with fabric and ribbon

preheat oven to 375*

Beat 3/4 cup Softened butter, 1 egg and 3/4 tsp. vanilla in large bowl until blended. Add cookie mix and 1/2 c nuts (optional) mix well, breaking up any clumps.

Drop by rounded teaspoonfuls onto ungreased cookie sheet. Bake 9-11 minutes or until golden brown. Makes 2 dozen.

Family Classic Meatloaf

Ingredients

  • 1 1/2 lb. extra lean ground beef
  • 1 can condensed tomato soup, divided
  • 1 package stuffing mix for chicken
  • 1 egg, lightly beaten
  • 1 onion, chopped
  • 1 tsp. dried thyme leaves
  • 1/4 cup chili sauce

Directions

Preheat oven to 350. Mix meat, 1/2 cup of the soup, stuffing mix, egg, onion, and thyme. Press evenly into 8x4 inch loaf pan sprayed with cooking spray. Bake 55 minutes. Heat remaining soup with chili sauce in small saucepan. Spoon over meatloaf just before serving. Makes 6 servings.

Easy Veggie Rice Medley

Ingredients

  • 1 Tbsp. canola oil
  • 1 each, onion, carrot, and stalk celery, chopped
  • 1/2 red pepper, chopped
  • 1 can chicken broth
  • 1 1/2 cup Minute Rice, uncooked
  • 1 cup frozen peas

Directions

Heat oil in a skillet. Add onion, carrot, celery and pepper; cook 5 minutes or until tender. Stir in rice and peas; cover. Simmer 5 minutes. Remove from heat. Let stand 5 minutes before serving.

Grab and Go Eggs

Ingredients

  • 2 eggs
  • 2 Tbsp. milk
  • dash salt
  • 1 (12 or 16 0z) heatproof disposable cup
  • 2 Tbsp. shredded cheddar cheese

Directions

In a small bowl, combine eggs, milk, salt and beat well. Pour into cup and place in microwave. Microwave on high for 1 minute. Stir mixture. Top with cheese. Microwave an additional 30 seconds or until eggs are firm. Stir before serving

The Ultimate Grilled Cheese (A kid's favorite!)

Ingredients

  • 1 Tbsp. Miracle Whip
  • 2 slices bread
  • 2 cheese slices

Directions

Spread 1 tsp. of the dressing on 1 bread slice. Top with cheese and remaining bread slice. Spread outside of sandwich with remaining dressing. Cook in nonstick skillet on medium heat 4 minutes on each side or until lightly browned on both sides.

Smothered Chicken Sandwich

Ingredients

  • 6 small boneless, skinless chicken breast halves
  • 1 can chicken gravy
  • 1 package stuffing mix for chicken
  • 1 1/2 hot water
  • 6 slices bread
  • 3 cup frozen peas, cooked (or your favorite veggie)

Directions

Add chicken to large nonstick skillet sprayed with cooking spray; cook 3 minutes on each side. Add gravy to skillet; cook 5 minutes or until chicken is cooked through.

Meanwhile, combine stuffing mix and water. Spoon stuffing over chicken; cover. Cook 5 minutes or until heated through. Place each stuffing topped chicken breast on 1 bread slice. Top with gravy from skillet. Serve with hot cooked peas or your favorite veggie.

Monday Night Chicken Tacos

Ingredients

  • Chicken Breasts (at least one per person)
  • Minute Brown Rice - (follow serving size directions)
  • Salsa - 1 Large Jar
  • Taco Shells
  • Sour Cream, optional

Directions

Grill chicken breasts in soy sauce. Cut in small pieces. Make rice according to package directions. Add in salsa and chicken. Serve on taco shells with sour cream, if desired.

I hate cooking on Monday nights, so I through together this dish because it is easy and fast.
