Creamy Vegetable Medley

Ingredients

  • 16 oz. package frozen california blend vegetables
  • 1 can fat free cream of mushroom soup
  • 1 cup shredded Cheddar cheese
  • 1/3 cup light sour cream
  • 1 (2.8 oz) can French fried onions
  • 1/4 tsp. black pepper

Directions

Preheat oven to 350 degrees F. Cook vegetables according to package directions. In large bowl, combine vegetables, soup, 1/2 cup cheese, sour cream, 1/2 can French fried onions, and pepper. Transfer to greased baking dish. Bake in preheated oven for 30 minutes. Sprinkle with remaining cheese and French fried onions. Bake 5 minutes longer.

This is also very good with SWISS cheese. It is a staple at our Thanksgiving meal.
