Tomato and Vegetable Soup

Quick, tasty and low calorie.

Ingredients:

  • Tin of plum tomatoes
  • Tin of sliced or whole carrots
  • Tin of mixed vegetables
  • Tin of water
  • 1/4 tsp. canderel sweetener (one of the brand names of the aspartame sweetener, like Splenda)
  • seasonings
  • herbs or spices of your choice to taste

Directions:

Blend tomatoes, carrots, sweetener, salt, pepper and and herbs, add a tin of water (carrots size tin). If you want to leave out the tinned vegetables, you could just have tomato and carrot soup adding coriander or basil.

The vegetables can be added with other seasonings. Warm through in the microwave. It is so quick, it can be blended in a jug and left in the fridge until needed.

Source: My own. When dieting with Weight Watchers I was tired of the "free vegetable soup" and this made a very, welcome change.
