I am a senior citizen who has severe arthritis, I find it hard to cook meals. I am looking for recipes using a Rice cooker. Any help to prepare meals using small appliances with a shut off alarm would be appreciated.

Weight Watcher's Pineapple Dessert Recipe

I am looking for a pineapple dessert recipe. It was a weight watcher's recipe years ago. Had plain gelatin, pineapple and I think powdered milk. I am diabetic and would love to have it again.

Today's Recipes


Crispy Italian Pork Chops

Ingredients

  • 4 bone-in pork chops, 1/2 inch thick
  • 1/2 cup Italian dressing, divided
  • 1 package Shake'n Bake Italian seasoned coating for chicken or pork
  • 4 cups arugula
  • 1/4 cup finely chopped tomato
  • 1/4 cup finely chopped red onion
  • 8 lemon wedges

Directions

Pound each pork chop with side of can, rolling pin or meat mallet to 1/4 inch thickness. Place chops in large resealable plastic bag. Add 1/4 cup of the dressing; seal bag. Shake gently to coat chops evenly with dressing.

Refrigerate 30 minutes to 1 hour to marinate. Drain chops; discard marinade. Preheat oven to 400 degrees F. Coat chops with coating mix as directed on package; discard any remaining coating mix. Place chops in large baking pan.

Bake 35 minutes or until cooked through. Toss arugula with remaining 1/4 cup dressing; arrange on serving platter. Top with chops; sprinkle with tomato and onion. Serve with lemon wedges, if desired.

Chocolate Chip Cheesecake Bars

Ingredients

  • 1 package (8 oz.) cream cheese, softened
  • 1/2 cup sugar
  • 1 egg
  • 1/2 cup coconut (optional)
  • 1 roll (18 oz.) pillsbury refrigerated chocolate chip cookies

Directions

Heat oven to 350 degrees F.

In small bowl, beat cream cheese, sugar, and egg until smooth.

Break up 1/2 of cookie dough into ungreased pan (9 or 8 inch square pan) with floured fingers, press dough evenly in bottom of pan to form a crust. Spread cream cheese mixture over dough. Crumble and sprinkle remaining dough over cream cheese mixture.

Bake 35-40 minutes or until golden brown and firm to the touch. Cool 30 minutes refrigerate at least 2 hours or until chilled. Cut into bars. Makes 16 bars.

Easy Baked Manicotti

Ingredients

  • 2 cups spaghetti sauce
  • 1 egg, lightly beaten
  • 1 3/4 cups ricotta cheese
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup grated parmesan cheese
  • 12 manicotti shells

Directions

Preheat oven to 350 degrees F. Spread 3/4 cup of the spaghetti sauce on bottom of 13x9 inch baking dish. Mix egg and cheeses until mixed well. Spoon cheese mixture into large resealable plastic bag. Using scissors, cut off small hole from one of the bottom corners of bag.

Fill manicotti shells, 1 at a time, squeezing cheese mixture into both sides of each shell. Place manicotti over sauce in dish; pour remaining 1 1/4 cups spaghetti sauce over manicotti. Cover with foil. Bake 40 minutes or until heated through.

Miracle Chicken Skillet

Ingredients

  • 1/4 cup Miracle Whip
  • 1 1/2 cup Minute rice, uncooked
  • 1 1/2 cup chicken broth
  • 1 Tbsp. chili powder
  • 4 small boneless, skinless chicken breast halves
  • 1 tomato, chopped
  • 1/2 cup shredded cheddar cheese

Directions

Mix dressing, rice, broth and chili powder in large skillet. Top with chicken. Bring to boil; cover. Reduce heat to low; simmer 25 minutes.

Top with remaining ingredients. Cook an additional 10 minutes.

How to Select and Prepare Shrimp

Among the many varieties of seafood, shrimp ranks as one of America's most favorite. Even people who dislike fish seem to enjoy shrimp and there is an endless number of ways in which shrimp may be prepared. The dense white meat of shrimp has a fresh, mild flavor that combines well with many ingredients. Shrimp is great for dieters as they are very low in fat and calories; however, they contain a greater level of cholesterol than most seafood so that must be taken into consideration if anyone has been advised by their physician to limit their cholesterol intake.

Of the numerous species of shrimp sold worldwide, saltwater shrimp are generally designated as 'cold water' or 'warm water' species. Cold water shrimp are caught in the North Atlantic and northern Pacific waters while warm water shrimp are caught in tropical waters. The majority of warm water shrimp available in the United States are harvested from the waters of the Gulf of Mexico and the South Atlantic. These shrimp are generally classified by the color of the shells (i.e., pink, brown and white shrimp). The differences in appearance and flavor are difficult to distinguish but it is thought that the Gulf white shrimp (although the most expensive) are the most desirable.

Shake 'N Bake Spicy Barbecue Chicken

Ingredients

  • 1/2 cup barbecue sauce
  • 1 Tbsp. Dijon mustard
  • 1 pouch Shake 'n Bake
  • 2 tsp. garlic powder
  • 8 small boneless, skinless chicken breast halves

Directions

Preheat oven to 400. Mix barbecue sauce and mustard in pie plate or shallow dish; set aside. Combine coating mix and garlic powder in separate pie plate or shallow dish. Dip chicken in barbecue sauce mixture, then in coating mixture, turning over to evenly coat both sides. Place in single layer in foil-lined baking pan. Discard any remaining coating mixture. Bake 20 minutes or until chicken is cooked through.

Fruit Salad

Fruit Salad I

Annie's Easy Fruit Salad

Ingredients:

  • Apples
  • Oranges
  • Bananas
  • Kiwis
  • Grapes

Directions

Chop fruit (except grapes) up in big squares or slices. Add red and green grapes.

Add any other favorite fruits

Then mix in a glass bowl (not metal) with plastic spoon (not metal) honey, lime or lemon, and powdered ginger

Tip: Add honey and ginger and then lime. Tt will soften the hardest of honey in a flash and this over the fruit salad tastes fresh and good

Fudgy Mocha Cookies

Ingredients

  • 1 Tbsp. instant coffee
  • 1 Tbsp. water
  • 1/2 cup flour
  • 1 (15.5 oz) pillsbury fudge supreme chocolate chunk brownie mix
  • 1/4 cup oil
  • 1 egg
  • 1/2 cup chopped macadamia nuts
  • 1 envelope (.82 oz) cappuccino mocha mix or 3 Tbsp. sugar

Directions

Heat oven to 350 degrees F.

In small bowl, dissolve instant coffee in water.

Lightly spoon flour into a measuring cup. Level off.

In large bowl, combine flour and brownie mix. Mix well. Add dissolved coffee, oil, and egg. Mix well. Stir in nuts (dough will be stiff.)

Shape into 1 1/2 inch balls. Roll into cappuccino mix to coat. Place 2 inches apart on ungreased cookie sheet.

Bake at 350 degrees F 9-12 minutes or until tops of cookies begin to crack. Do not over bake!

Remove from cookie sheet and allow to cool for about 20 minutes or until completely cooled. Cookies will set up while cooling. Makes about 24 cookies

Barbecue Bacon Party Spread

Ingredients

  • 2 packages cream cheese, softened
  • 1/2 cup barbecue sauce
  • 1 package Oscar Mayer Real Bacon Recipe Pieces - or generic brand
  • 1 small tomato, chopped
  • 1/2 cup chopped green pepper
  • 1/3 cup sliced green onion
  • 1 1/2 cups shredded cheddar cheese

Directions

Spread cream cheese on large platter; drizzle with barbecue sauce. Top with all remaining ingredients. Serve with crackers, chips, or veggies.

Ultimate 7-Layer Dip

Ingredients

  • 1 can refried beans
  • 1 Tbsp. taco seasoning
  • 1 cup sour cream
  • 1 cup salsa -chunky is best
  • 1 cup shredded lettuce
  • 1 cup shredded cheese - your choice of kind
  • 1/2 cup sliced green onions
  • 2 Tbsp. sliced pitted ripe olives

Directions

Mix beans and taco seasoning mix. Spread onto bottom of 9 inch pie plate. Layer all remaining ingredients over bean mixture; cover. Refrigerate several hours or until chilled. Serve with crackers, chips, or veggies.
