Ribs and Red Cabbage

This is the perfect meal for the chilly weather coming up. Use western style ribs, which can be very cheap and much meatier than other ribs. Cooking them this way makes them very tender. The dish has a bit of a sweet sour taste and is just great served with mashed potatoes.

Ingredients:

  • 2 lbs. western style pork ribs
  • 1 medium - large red cabbage
  • 1 large onion
  • 2 big apples
  • 1/2 cup cider vinegar
  • 1/2 cup brown sugar
  • salt and pepper, to taste
  • water

Directions:

Rub the ribs with a little salt and lots of pepper, place in broiler pan, and brown under the broiler until the fat is rendered, and the ribs are nice and brown on both sides.

Saute the onion in a little butter or in a little bit of the pork fat. Chop the cabbage and add to the onions, saute on high for a few minutes, then add a couple of inches of water, the vinegar and brown sugar and stir to combine. Boil 10 minutes, stirring often, then add the ribs and reduce the heat. Cover and roast at 350 degrees F for 1 1/2 - 2 hours, until the meat is cooked through, and the cabbage is tender. Cut the apples into 6 or 8 wedges each and add. Roast 1/2 hour more.
