Mom's Dutch Apple Cake

When I opened my Mother's binder last night to check the recipe it fell apart I had to find a rubber band and tie around it to hold them all together! The pages fell every where! I'll have to find a new one now. I'm a sentimental old fool. I hate to get rid of it just because it was Mom's!

ANYWAY...here's the recipe:

Ingredients

  • 2 eggs
  • 1 cup vegetable oil
  • 2 cups sugar
  • 1 Tbsp. vanilla
  • 2 cups flour
  • 1/2 tsp. baking soda
  • 1 tsp. salt
  • 1 Tbsp. cinnamon
  • 1 cup walnuts (chopped fine)
  • 4 cups apples (diced or thinly sliced)

Directions

Beat together eggs and oil, add sugar, vanilla, flour, soda, salt and cinnamon. Mix until batter is stiff.

The best way to mix this batter is the old fashioned way---with your hands.

Bake in 13 x 9 inch greased pan at 350 degree F oven for 45-50 minutes until cake tests done.

Frost with Butter Cream Frosting.

Butter Cream Frosting

  • 2 cups Powdered Sugar
  • 1/4 cup Butter (softened)
  • 2 tsp. Vanilla
  • 3-4 tsp. Milk
Mix sugar and softened butter until smooth. Add vanilla. Blend well. Add milk until of spreading consistency. Spread on cake.

Chris, do you mix the apples and nuts into the mixture or do you lay them on top of the batter before it is baked?

Seems to me you should get those recipes printed and bound and then distribute copies to family members.
The way to keep recipes living is to share them.

I once misplaced a recipe and got it back from a family member by having shared it in the first place.

Silly question, I guess, but are the apples and walnuts added to the batter? Sounds good and I'll try your recipe, although I am usually too lazy to bake from scratch!
