Skillet Chicken Parmigiana

This is chicken parmigiana made in a skillet. I actually like to use brown eggs instead of white ones, since they are healthier when I can. This is also good served over steaming hot spaghetti topped with pasta sauce and cheese, like our favorite restaurant serves it :)

Ingredients:

  • 4 boneless chicken breast halves (about 1 1/4 lb.)
  • 1/3 cup Italian style bread crumbs
  • 1/3 cup grated Parmesan cheese
  • 1 egg
  • 2 Tbsp. vegetable oil
  • 2 cups pasta sauce (any kind, except Alfredo, the white kind)
  • 1/2 cup shredded mozzarella cheese (2 oz.)

Directions:

Between two sheets of wax paper, or plastic wrap, flatten each chicken piece to 1/4 inch thickness.

Mix bread crumbs and Parmesan cheese. In another dish, beat egg. Dip chicken into egg and then coat with bread crumb mixture.

Heat oil in 12 inch skillet over medium heat. Cook chicken in oil 10 15 minutes, turning once until no longer pink in center. Pour pasta sauce over chicken in skillet, heat until hot. Sprinkle mozzarella cheese over chicken.

Prep Time: 25 Minutes
Cooking Time: 10 - 15 Minutes

According to the experts, there is no nutritional difference between brown and white eggs. What the chicken eats and the freshness of the egg is what counts nutritionally.

Agreed - the only difference between white and brown eggs is literally the color of the shell, which is determined by which variety of chicken lays them. There is no nutritional difference whatsoever.
