Hitch Doughnuts

Sponge:
  • 1/2 cake of yeast
  • 1 pint warm water
  • 1 Tbsp. sugar
  • Flour as needed

Doughnuts:

  • 1 pint sponge
  • 1 cup melted lard
  • 4 eggs
  • 1 pint milk
  • 2 cups sugar
  • 1/2 tsp. salt
  • Nutmeg to taste
  • Flour as needed

Directions:

To make sponge: Put 1/2 cake yeast in pint of warm water. Add tablespoon of sugar and add enough flour to make it like bread sponge. Let raise until light.

To Make Doughnuts: Combine sponge, melted lard, eggs, milk, sugar, salt, nutmeg, and flour to make a stiff dough. Let raise until light. Roll dough and cut with doughnut cutter. Let raise a second time to double in size. Deep fat fry doughnut rings. Roll doughnuts in powdered sugar or frost them.
