Carrot Bread

Ingredients:

  • 1 cup sugar
  • 3/4 cup oil
  • 1 tsp. cinnamon
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1 cup grated raw carrots
  • 2 eggs
  • 1 1/2 cups flour

Directions:

Mix all ingredients and pour into greased bread loaf pan. Bake at 350 degrees F. for 50-55 minutes.

Skipping the butter is cool-healthy. :-)
I prefer brown sugar over regular sugar. Also, this recipe works well for shredded zucchini. In place of carrot.

Recipe: Carrot Bread

Ingredients:

  • 2 cups flour
  • 1 cup chopped nuts
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 3 tsp. baking powder
  • 1/3 cup oil
  • 1 tsp. cinnamon
  • 1/2 tsp. salt
  • 2 cups shredded carrots
  • 1/2 cup milk
  • 1 egg

Directions:

Combine in usual way until well blended. Pour into large 9x5 inch loaf pan. Bake at 350 degrees for 50-60 minutes.

Ingredients:

  • 1 cup sugar
  • 3/4 cup cooking oil
  • 2 eggs
  • 1/4 tsp. salt
  • 1 1/2 cup grated carrots
  • 1/2 cup chopped walnuts
  • 1 tsp. baking soda
  • 1 1/2 cup all purpose flour
  • 1/2 tsp. cinnamon
  • 1/2 tsp. nutmeg

Directions:

In a large bowl, mix sugar and oil together. Add eggs and salt; mix well. Stir in carrots and nuts. In a medium size bowl, sift dry ingredients together and add to carrot mixture. Stir only until well blended. Pour batter in greased 9"x3" loaf pans. Bake at 350 degrees for 1 horr.
