Skipping the butter is cool-healthy. :-) I prefer brown sugar over regular sugar. Also, this recipe works well for shredded zucchini. In place of carrot.

In a large bowl, mix sugar and oil together. Add eggs and salt; mix well. Stir in carrots and nuts. In a medium size bowl, sift dry ingredients together and add to carrot mixture. Stir only until well blended. Pour batter in greased 9"x3" loaf pans. Bake at 350 degrees for 1 horr.
