Rhubarb Pudding (Cobbler)

Ingredients

  • 1 Tbsp. butter
  • 1 cup sugar
  • 1 egg
  • 1/2 cup milk
  • 2 tsp. baking powder
  • 1 1/4 cup flour
  • 1/2 Tbsp. salt
  • 2 cups rhubarb, cut fine
  • Ad
  • 1 cup boiling water
  • 1 cup sugar

Directions

Combine all ingredients, except rhubarb, boiling water and second cup of sugar. Mix well. Pour into greased baking pan. Combine the rhubarb, boiling water and sugar. Pour over batter. Bake at 375 degrees F for 30 minutes.
