Many years ago, I had a recipe for salmon patties taken from a Lucerne milk carton. This recipe used canned salmon and cottage cheese. I don't remember all of the other ingredients or the amounts. Can anyone out there help me? Thanks.
I'm going to add cottage cheese to mine next time, sounds good. The only differences from the recipe below: I saute the onions first, and use oatmeal instead of breadcrumbs in the patties. I don't dip them in crumbs either, and I fry them in olive oil. You can also use leftover cooked salmon.
1 (1 lb.) can salmon, drained and flaked 3 eggs, slightly beaten 3/4 c. dried bread crumbs 1 c. cottage cheese 1 Tbsp. chopped parsley 1 small onion, minced 4 Tbsp. butter dried bread crumbs for dipping
Combine salmon, eggs, bread crumbs, cottage cheese, parsley and onions. Shape into 12 patties. Dip patties in bread crumbs and fry in butter until golden brown on both sides. Makes 6 servings.
