Moist Cheesy Spinach Stuffing

In a large kettle, add chopped onions, green pepper and celery, (amount you desire), then add half a stick of butter, 1 can of chicken broth, salt, pepper, onion powder, garlic powder and chicken seasoning, 3-4 shakes each. Bring to a light boil then add 1 package frozen but thawed spinach, with juice and cook for a few minutes to just soften the veggies, turn the heat down and add 1 can of cream of celery soup with about half a can of water. Mix and remove from stove.

Add up to 1 small bag of shredded cheese, (your favorite kind) and mix to a light melt. Add 2 boxes of stuffing, (your favorite brand) and mix until all blended. Pour into a lightly sprayed casserole dish and bake at 350 degrees for about 25 minutes, until lightly browned.

Note, you can use canned spinach with the juice but omit the 1/2 can of water and/or it can be served without baking, for those hot days but don't add any water, will be too moist.
