Grilled Seasoned Shrimp

Ingredients

  • 1 1/2 lb. uncooked large shrimp
  • 1 small red onion, sliced and separated into rings
  • 1/4 cup Italian salad dressing
  • 2 green onions, chopped
  • 2 Tbsp. lemon juice
  • 2 Tbsp. balsamic vinegar
  • 2 Tbsp. olive oil
  • 3 garlic cloves, minced
  • salt and pepper, to taste, opt.

Directions

Peel and devein shrimp leaving tails intact, if desired. Coat a grill rack with nonstick cooking spray before starting grill. Grill shrimp, covered, over indirect medium heat for 2-3 minutes on each side or until shrimp turns pink. Cool; cover and refrigerate until chilled. In a large resealable plastic bag, combine the remaining ingredients; add shrimp. Seal bag and turn to coat; refrigerate for at least 2 hours. Serve with a slotted spoon.

Malted Milk Cookies

Ingredients

  • 1 cup butter (no substitutes), softened
  • 3/4 cup packed brown sugar
  • 1/3 cup sugar
  • 1 egg
  • 2 tsp. vanilla
  • 2 1/4 cups flour
  • 2 Tbsp. instant chocolate drink mix
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 2 cups malted milk balls, crushed

Directions

In a mixing bowl, cream the butter and sugars. Beat in egg and vanilla. Combine the flour, drink mix, baking soda and salt; gradually add to creamed mixture. Stir in malted milk balls. Shape into 1 1/2 inch balls. Place 2 inches apart on greased baking sheets. Bake at 375 degrees F for 10-12 minutes or until set. Cool for 1 minute before removing from pans to wire racks.

Barbecued Country Ribs

Ingredients

  • 1/3 cup flour
  • 1/4 tsp. garlic powder
  • 1/4 tsp. salt
  • 1/8 tsp. pepper
  • 1 1/2 lb. boneless country-style ribs, cut into 2 inch chunks
  • 1 Tbsp. vegetable oil
  • 1 cup hot water
  • 1/2 cup ketchup
  • 1/4 tsp. chili powder
  • 1/8-1/4 tsp. hot pepper sauce
  • 1 small onion, halved and sliced

Directions

In a large resealable plastic bag, combine the flour, garlic powder, salt and pepper. Add rib pieces; shake to coat. In a pressure cooker, brown meat on all sides in oil; drain. Combine the water, ketchup, chili powder and hot pepper sauce; pour over ribs. Add onion. Close cover securely; place pressure regulator on vent pipe. Bring cooker to full pressure over high heat. Reduce heat to medium high and cook for 15 minutes. Remove from the heat; allow pressure to drop on its own. Skim fat from sauce if necessary and serve with ribs, if desired.

Turkey Stuffing Roll-Ups

Ingredients

  • 1 package stuffing mix
  • 1 can cream of chicken soup, undiluted
  • 3/4 cup milk
  • 1 lb. sliced deli smoked turkey
  • 1 can french-fried onions, crushed

Directions

Prepare stuffing mix according to package directions. Meanwhile, in a bowl, combine soup and milk; set aside. Spoon about 1/4 cup stuffing onto each turkey slice. Roll up and place in a greased 9x13 inch baking dish. Pour soup mixture over roll-ups. Bake, covered, at 350 degrees F for 20 minutes. Sprinkle with onions. Bake 5 minutes longer or until heated through.

No-Bake Cheesecake Pie

Ingredients

  • 1 cup vanilla or white chips
  • 2 packages. (8oz. each) cream cheese, cubed
  • 1 carton frozen whipped topping, thawed (8oz.)
  • 1 graham cracker crust - 9 inch
  • 1/3 cup English toffee bits or almond brickle chips

Directions

In a heavy saucepan, melt chips over medium-low heat; stir until smooth. Remove from heat; stir in cream cheese until smooth. Fold in whipped topping. Pour into the crust. Cover and refrigerate overnight or until set. Just before serving, sprinkle with toffee bits.

Peanut Butter Pancakes

Ingredients

  • 1 cup pancake mix
  • 2 Tbsp. sugar
  • 1 egg
  • 1/3 cup peanut butter
  • 1 can evaporated milk
  • 1/3 cup water
Honey Butter:
  • 1/4 cup butter ( no substitutions), softened
  • 2 Tbsp. honey

Directions

In a bowl, combine pancake mix and sugar. In a small bowl, beat egg and peanut butter; add milk and water. Stir into dry ingredients just until moistened. Pour batter by 1/4 cupfuls onto a lightly greased medium hot griddle. Turn when bubbles form on top of pancakes; cook until second side is golden brown. Combine butter and honey in a small bowl. Serve with the pancakes.

Chocolate Banana Bread

Ingredients

  • 1/2 cup butter or margarine, softened
  • 1 cup sugar
  • 2 eggs
  • 1 cup mashed ripe bananas (about 2 medium)
  • 1/4 cup milk
  • 1 tsp. vanilla
  • 2 cups flour
  • 1/4 cup baking cocoa
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1/2 cup chopped nuts, opt.

Directions

In a mixing bowl, cream butter and sugar. Add eggs, bananas, milk and vanilla. Combine the flour, cocoa, baking soda and salt; add to the banana mixture and mix just until combined. Fold in nuts, if desired. Transfer to a greased 9x5 inch loaf pan. Bake at 350 degrees F for 60-65 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack.

Scoops of Ice Cream Pie

Ingredients

  • 2 pints vanilla ice cream, divided
  • 1 cup chocolate wafer crumbs
  • 1/2 cup chopped almonds
  • 1/4 cup butter or margarine, melted
  • fresh raspberries
  • fresh mint, opt.

Directions

Soften 1 pint of ice cream.combine the cookie crumbs, nuts and butter. Press onto the bottom and up the sides of a 9 inch pie plate. Spread with the softened ice cream. Cover and freeze until firm. Scoop remaining ice cream into small balls; pile into crust. Cover and freeze for up to 2 months. Remove from the freezer 10 minutes before serving. Arrange raspberries between scoops. Garnish with mint if desired.
