I have a few camping tips for cooking. I also would love it if you will share some of your recipes you have. It is always nice to get tips on food they are hard to find for camping. We bought a Pie Iron and this little pie maker is great. I guess what a lot of people do is buy one for each person in their family. This way you can each cook maybe one meal with everyone cooking something different. What I would love is the recipe for pizza because I have heard it is great! There are recipes on the inside cover of the pie iron for breakfast, lunch, dinner and snacks. You can also go to http://www.pieiron.com/ for recipes. On the night before you leave, have a leftover night if possible. Everyone has something left over from another night they like. This helps to avoid bringing home a lot of food you usually have to toss. As each person can just chose something they like leftover from dinner two nights before. One other thing we bought (I can not for the life of me remember the name but I will describe it as best I can): It is a lot like a grill, however it works a little differently. You set up a tripod over the spot they designate for campfires, the grill is hooked to chains on the tripod. It is set so you can raise and lower it. You can cook as close or as far away to the fire. This is great in the fact it allows you more ways to cook different things the way you need to cook. Also it locks in place to avoid accidents. It comes apart and does not take up a lot of space which you know you never seem to have enough of. I hope this helps somebody I know a lot of people know about these things but when we first started camping we did not know much and it worked on the we learn as we go principle. Rate It: Using Anaheim Chile Peppers (New Mexican Chiles) Description: Anaheim peppers also known as New Mexican chiles, can range in heat level depending on where they are cultivated, maturity level, and how they are prepared. Usually they have a mild to medium heat level. These chiles range in color from light green to red. As the chiles mature the skin turns red but can be used for cooking at any point. These peppers are commonly used in decorative chile hangings called ristras, which are traditionally made for storing for later use, but these strings of dried chiles have also gained popularity in some home decor. Uses: Anaheim peppers are most often used in chile rellenos. These chiles can be stuffed like poblanos. Buying Fresh When buying fresh, the chiles should be vibrant in color, without wrinkled, soft skin. Preparation: The skins should be removed before eating because the skin is tough. This can be done by broiling the chiles in the oven until the skin is blackened or over a gas flame. Then let the chiles cool in the refrigerator then the skin can be removed easily. If you want to cut the heat remove the seeds and membranes before cooking. For stuffing, slit the chiles open length wise and carefully remove the seeds and membrane, then stuff. Storage: Chiles can be stored in a paper bag in the refrigerator for a week and in an airtight container in the freezer for up to a year. These chiles can also be roasted and stored in the refrigerator for 2 weeks and in the freezer for 3 months.

Rate It: Tips for saving money on eggs as suggested by the ThriftyFun community. Eggs in Recipes I've noticed when baking something if the recipe calls for three eggs, I can usually get away with just putting in 2. If it calls for 2 egg whites, I usually just put one whole egg. Everything still turns out the same. By Melanie Keep Chickens In the Backyard If you have a reasonable sized back garden (yard), and your local government allows, keep 2-4 chickens depending on the size of your family. You will have eggs galore, enough for all your needs and some to give to friends, family and neighbors. The added bonuses are they will use up all your kitchen scraps instead of putting them through a waste disposal system and overloading the sewage plant or sending them to landfill. You will have the chicken wastes to use on the garden, (a very rich fertilizer), and they can be moved around in a mobile bottomless pen to do your garden weeding. If you get a placid variety, they also make good pets for children, and if you get all the same color and one dies, you can pop another one in without the children noticing. My favorites are ex-battery hens which are very placid and easy to pick up for a pet and you also have the satisfaction of giving them a happy life after the living hell of a battery cage. The last benefit I can think of, (there are probably many more!), is that you know exactly what goes into your eggs - no antibiotics and other drugs, etc. P.S. I had forgotten to pick up bread on my way home, and had only a couple of refrigerated crescent dinner rolls to serve my new thoughts of what to make for a quick lunch. This was the result. Ingredients
Directions Preheat oven to 375 degrees F. Separate dough into 8 triangles; spread with cream cheese. Top evenly with remaining ingredients. Roll up, starting at the shortest side of each triangle. Place point-sides down on baking sheet. Bake 12 to 15 minutes, or until golden brown. Serve warm. Makes 8 servings. Directions Preheat oven to 400 degrees F, unless you have a microwave. In a bowl, combine the chicken, half the scallions, and 1/2 cup of the enchilada sauce. Soften the corn tortillas, two at a time, by steaming them for 10 seconds, or cook in a microwave for 10 second on high. Spoon 1 cup of the enchilada sauce on the bottom of a 9x11-inch pan. Fill each tortilla with about 1/4 cup of the chicken mixture. Roll each tortilla and place seam side down on the sauce in the pan. Top with the remaining cup of enchilada sauce, sprinkle with the cheese and the remaining scallions. Bake for 10 minutes or microwave on high for 5 minutes. Directions Combine flour and powdered sugar in medium bowl. Cut in butter with pastry blender or two knives until crumbly. Press onto bottom and 1-inch up sides of an ungreased 13x9-inch baking pan. Bake for 25 minutes. Place cream cheese, eggs, evaporated mllk, granulated sugar, flour, lemon juice, lemon peel and food coloring in blender container; cover. Blend until smooth. Pour onto partially baked crust. Bake for an additional 15 minutes or until set. Cool in pan on wire rack. Spread sour cream over top; refrigerate. Cut into bars. Garnish as desired. Directions Cut chicken breasts in 1 inch cubes. Heat oil in a wok or large skillet. Add chicken and cook over moderate heat, stirring frequently for 5 minutes until chicken in white. Remove from wok. Place broccoli, red pepper, mushrooms and onions in wok and cook 3 minutes, stirring frequently. In small bowl mix chicken broth, corn starch, soy sauce and Tabasco. Return chicken to wok along with broth mixture. Cook, stirring constantly about 5 minutes until sauce thickens slightly. Sprinkle with cashew nuts and serve over hot rice.
