Skillet Spanish Rice |

Ingredients
- 1 medium onion, chopped
- 1/2 green pepper, chopped
- 1 small garlic clove, minced
- 1 cup uncooked rice
- 1/2 lb. hamburger
- 1 can tomato sauce
- 1 1/4 cups hot water
- 1 tsp. salt
- Few dashes pepper
- 1 Tbsp. bacon bits
- 1/2-3/4 cup grated cheese
Directions
In large skillet, put onion, green pepper, garlic, rice and hamburger. Stir over high heat until lightly browned. Add the tomato sauce and remaining ingredients except cheese. Mix well and bring to a boil. Cover and simmer 25 minutes. Sprinkle cheese over top just before serving. Makes 6 servings.

you can also just brown the burger(We use the 3% fat), add a big jar of chunky salsa (I like Pace meduim heat) , and cooked rice (We use whole grain rice). Let simmer for about 25 minutes. Before serving we sprinkle cheese (We use parmesean) on it! I like everything to be super easy! This is also super healthy!!!! Low in fat, high in good grains, and has a ton of veggies!--Good Eats-Misty
