Fruit Salad

Ingredients:

  • 1 can fruit cocktail, drained
  • 1 can crushed pineapple, drained
  • 1 can mandarin oranges, drained
  • 1 cup shredded coconut (opt.)
  • 2 cups small marshmallows
  • 2 cups whipped topping
  • 1-2 cup fresh fruits in season such as strawberries, blueberries, oranges, apples, peaches
  • 1 can apricot pie filling

Directions:

Mix ingredients together except whipped topping. Cool several hours before serving. Mix in whipped topping. Serves 12.

Doris' Fruit Salad

A refreshing side dish we love in summer with sandwiches. We find these are enough fruits but you can add others if you like.

Ingredients:

  • 1 - 20 oz. can chunk pineapple, with juice
  • 1 - 3 oz. package instant vanilla pudding
  • 1 can drained mandarin oranges
  • Cut up apple, banana and and one or two more fresh fruits you like.

Directions:

Early in the day or the night before, gently mix the pineapple and oranges with the dry pudding. Chill. Before serving, add the apple, banana and other fruits. Chill for an hour if you like but it's not necessary, unless you want chilled apples and bananas.

Servings: 4-6 or more

Ingredients:

  • 1 can pineapple chunks and juice (17 oz.)
  • 1 can fruit cocktail and juice (17 oz.)
  • 1 cup coconut
  • 1 small mandarin oranges (drained)
  • 1 package instant lemon pudding (3 oz.)

Directions:

Put all in plastic bag and mix well. Pour in pan or bowl. Refrigerate until set.

Quick Fruit Salad

If you keep canned fruits and a bag of mini marshmallows on hand at all times, a bowl of fruit salad can be made very quickly. To serve to unexpected company or just something to eat on while watching TV.

Ingredients:

  • 1 can peach pie filling
  • 1 can pineapple tidbits (drained)
  • 1 can mandarin oranges (drained)
  • 3 bananas

Directions:

Mix all of above together and refrigerate.

Take 3 large bananas (peeled and diced) and place in a large bowl.


Chop fruit (except grapes) up in big squares or slices. Add red and green grapes. Add any other favorite fruits.


Drain pineapple, reserve 1/4 cup juice.combine all the fruits in a clear bowl, if possible. In a small bowl, mix remaining ingredients, well.


Drain pineapple, reserving juice. Combine sugar, flour, egg and pineapple juice in a small saucepan, cook over low heat, stirring constantly, until smooth and thickened.
