Vegetarian Thanksgiving Recipes

I am planning a vegetarian thanksgiving and I am looking for some good recipes that will not have meat but still capture some of the flavor of a good Thanksgiving meal. Any advice, recipes or tips would be great.

Mock Canned Pineapple

Ingredients

  • 4 qt. zucchini (diced)
  • 1 can unsweetened pineapple juice
  • 1 1/3 cup bottled Real Lemon juice
  • 3 cups sugar
  • Pineapple flavoring (if desired)

Directions

Mix together and simmer 20 minutes. Fill hot clean jars; seal. Put in hot water bath for 20 minutes for pints or 25 minutes for quarts.

Taffy Apples

Ingredients

  • 1 can Eagle Brand milk
  • 1/2 cup sugar
  • 1/2 cup white Karo syrup
  • 1/3 cup brown sugar
  • 1 Tbsp. butter
  • 1 1/2 tsp. vanilla

Directions

Cook first 4 ingredients until you can make a firm ball in cold water. Remove from heat; add butter and vanilla. Mix together. Coat apple

Taffy Apple Coating:

Ingredients
  • 1 pkg. cream cheese
  • 1 cup brown sugar
  • 1 tsp. vanilla

Directions

Soften cream cheese; add brown sugar and mix well. Add vanilla; beat until smooth. Quarter apple and dip.

Marshmallow Fudge

Ingredients

  • 1 pkg. semi-sweet chocolate chips
  • 1 cup crunchy peanut butter
  • 4 cups miniature marshmallows

Directions

Microwave in bowl chocolate chips and peanut butter 3 to 4 minutes until melted stirring every 1 minute. Fold marshmallows into chocolate mixture and pour into greased 9x9 pan.

All Day Apple Butter

Ingredients

  • 5 1/2 lbs. apples (peeled and finely chopped)
  • 4 cups sugar
  • 2-3 tsp. cinnamon
  • 1/4 tsp. ground cloves
  • 1/4 tsp. salt

Directions

Place apples in a slow cooker. Combine sugar, cinnamon, cloves, and salt; pour over apples and mix well. Cover and cook on high for 1 hour. Reduce heat to low; cover and cook for 9 to 11 more hours or until thickened and dark brown, stirring occasionally. (Stir more frequently as it thickens to prevent sticking.)

Uncover and cook on low 1 hour longer. If desired, stir with a wire whisk until smooth. Spoon into freezer containers, leaving 1/2 inch headspace. Cover and refrigerate or freeze.

Chocolate Cobbler

This is great for all you chocolate lovers and it is so easy. We love this recipe.

Ingredients

  • 1 box (21 1/2-ounce size) brownie mix
  • 1/2 cup water
  • 1/2 cup vegetable oil
  • 1 egg
  • 1 package (9-ounce size) yellow cake mix - dry
  • 1/4 cup butter or margarine - softened
  • 1 can (21-ounce size) cherry filling and topping

Directions

Prepare brownie mix according to package directions using water, vegetable oil and egg. Spread dough evenly in a lightly greased 13 x 9 x 2-inch baking pan.

Bake in a preheated 350 degree F oven 15 minutes, or until brownies are halfway done.

Meanwhile, cut butter into dry cake mix until mixture is crumbly. Remove half-baked brownies from oven; spoon cherry filling as evenly as possible over brownie layer. Sprinkle cake mixture over cherry layer.

Continue baking in a 350F degree oven about 50 minutes, or until top is golden brown and brownies and filling are set. Serve warm with whipped cream or ice cream. Yummooo!
