Leftover Ham Potato Soup

I made this with leftover ham, green bean casserole and mashed potatoes from Christmas. It would be a good Easter leftover recipe. If you don't have leftover green bean casserole, add chopped frozen green beans, a can of cream of mushroom soup and increase the sauteed onions. You could also substitute Potato Buds for mashed potatoes.

Ingredients

  • 1/2 cup onion, chopped
  • 2 cloves garlic, minced
  • 1 cup cooked ham, chopped
  • 1-2 cups of leftover Green Bean Casserole, chop larger beans to bite size
  • 1-2 cups of leftover mashed potatoes
  • 1 quart chicken, beef or vegetable broth (or water, in a pinch)

Directions

Saute onion and garlic in large soup pot until onions are translucent. Add rest of ingredients and heat to a boil. Reduce heat and let simmer, tasting for seasoning and adjusting as necessary.
